Interesting! You'd think it would be impossible for anything to grow in that kind of vinegar/brine environment. Seems like a shame to waste food... but it's a bit dodgy to determine what is causing the fizzing... simple fermentation (like kombucha, for example) or botulism (which would be REALLY bad...).
