Asian inspired rice noodle stir fry with spicy peanut butter sauce

in #veganwednesday6 years ago (edited)

Hey steemies!

This week I thought I would join @heart-to-heart in her #veganwednesday challenge. She promised it wouldn't be torture so I will hold her up to that!! Just kidding, it wasn't that bad, just a few adjustments to my cooking since I can't use butter or honey...she said it was the forbidden fruit.

This is one of my go-to meals when I don't really feel like making anything because it's so effortless to make. You can add whatever vegetables you would like but I chose to go with red peppers, mushrooms, onion, pea pods and celery. Call me crazy, there is just something about pea pods and celery with peanut butter... I just can't explain it, match made in heaven. Fell free to replace coconut amino with low sodium soya sauce if you would like, since I'm severely allergic I have to use a substitute. For 2 servings of this recipe you will need:

For the peanut butter sauce

  • sesame oil for cooking
  • 1 tbsp of finely chopped onion
  • 1tbsp of finely chopped celery
  • 1 garlic clove, pressed
  • 1/2 cup of water
  • 2 hefty tbsp of peanut butter
  • 1 tsp of fresh chili paste (red fermented pepper sauce you put on your Asian food)
  • 1 tbsp of coconut amino
  • salt to taste

For the vegetable stir fry

  • 3 cups of sliced vegetables
  • 1 and half cup of rice noodles cooked as per package directions(about 1/3 of the package)
  • 2 green onions
  • one garlic clove
  • sesame oil / olive oil for cooking
  • cashews or peanuts, chopped

Directions

  • First you need to make you vegetable stock for the sauce. In a saucepan on medium heat, add finely chopped onion and celery with the sesame oil and allow to brown, once browned, press the garlic and allow to cook until it browns as well. Reduce heat to low and add 1/2 cup of water and bring it to a boil while scraping the bottom to get flavors. Drain the broth in a cup to remove the veggie bits and set the veggie scraps aside(I just throw mine in the stir fry later).

  • Continuing on low heat, add the chili paste , coconut amino and the peanut butter. Salt to taste. Stir and allow to boil until desired thickness then remove from heat once the sauce is blended to a consistent texture.

  • Using package directions, cook the rice noodles, once cooked drain and rinse in cold water to stop them from cooking and to avoid the starch from sticking the noodles into a big clump.

  • In a large skillet on medium heat, heat olive oil and add the 3 cups of vegetable and salt to taste, I like them still crunchy so cook until the outside start to brown, add pressed garlic and the cashews or peanuts, allow to brown. Add the cooked noodles and sesame oil and allow to fry for a minute and stir ocasionaly. You can add the spicy peanut sauce to the noodles in the pan if you wish but it may make them sticky or you can add the sauce on top of the vegetable and noodle mixture once plated and top with green onions.

I like mine super spicy so I generally add more chili paste once it's cooked. Hope you enjoy!

Bon apetit !! xox

De nada, gracias por pasar @yosicrespo! :)

That looks deliiiish! I need one of those right about... NOW!

It is so good and easy to make! Thanks for stopping in! :)

See? Not torturous at all! You did great! This looks delicious! I'm so happy you decided to give it a whirl! I bet you barely even missed the forbiddeness of it because of how amazing it turned out right? ;) How did it go? Did you share it with anyone?

You were right !! my taste buds didn't feel tortured at all!! It was pretty tasty indeed. It went well, so well I made it twice and ate all of it myself( not all in one meal) because my better half is away for the week but He's had a similar version of it with the forbidden fruits before... I will still make it again without when he gets back. Thanks for stopping by :)

Oh yay! That's excellent news! I'm happy it went well so you might want to give it a go again sometime and more than that so you don't tell everyone on Steemit that I am some kind of villain taking your food away from you :) Thanks for sharing it! <3 I love when people give it a try who don't normally eat that way. My dad was surprised at how much he actually enjoyed it as well when he was here ;)

i will certainly try to be a regular in your challenge( my entry for this week is coming I promise!)....you are not a villain!! I like to misbehave and be a jokster...if I make jokes it's cause I like you. I'm not a vegan but because of my severe food allergies to soybeans I actually don't eat much meat at all because all the farm animals eat soya so them and their products are toxic to me (except for beef for whatever reason)so I only eat traces so I don't get sick so making vegan things is just a slight adjustment a little more strict than my already strict diet (trust me when I say soya eliminates most food as it is)

I would love that! You are certainly welcome whenever you are able to join :) I'm kind of a rebel too so I understand. You know going against the popular opinion of the world and deciding not to eat what everyone else is, is kind of a testament to my defiance ;)

That's rough about the soybeans. I read an article a little while back suggesting that soy allergies could be attributed to the chemicals and GMO crops they use. I wonder if it's that for you and if an organic, non GMO source would have the same effect. Obviously we can't test this because I wouldn't want it to negatively affect you but I do wonder... Hmmm...

On the other hand, that's the brightside and now maybe getting in on this contest and seeing the fun that can be had will open up your diet to new possibilities! I'm actually really lactose intolerant as well as gluten intolerant and I used to just cry myself to sleep thinking there was nothing for me to eat but the lovely online world really changed that for me! 💖 I'm looking forward to more creations!

lol, "crying yourself to sleep with nothing to eat" you just described my facebook page and most trips to the market(they even wash vegetables in it soy solution)...haha. Your challenge will help give me inspiration to new dishes to make.

I read something along the lines of what you read about gmo ad the chemicals used and there is definitely some element of truth to it and I firmly believe it is also true for gluten intolerance. When I was young, I don't remember being so many sick people especially kids(cancer allergies diabetes etc) While I was trying to figure out what I was allergic to I was eating lots of organic soy products and I had no issues with them, it was much of a suprise to find out soy was my allergy. As a precaution I abstain because of the risk of cross contamination and just in case I was wrong. The issue with that is with all the paid research provided is bias to favor those who control such crops/profits and every scientist making a coloration to what both you and I believe has to retract their paper or get discredited and loose their position. I like to dig in dark places and investigate things and I started pulling out statistics and dates from the cdc, epa, court cases and other government records and I made many links to the involvement and emergence of different bio-tech, also the same products have been used in war crimes in other countries are currently in our food and being dumped in rivers across North- America in the same areas where the cdc shows clusters of rare ailments in certain areas where they are produced. This can also be true towards certain vaccines (some are beneficial) but looking in third world countries and outbreaks seem to correlate with certain missions funded by certain ppl and the rare specific strain of the outbreaks was filed for patent 5-10 years before the outbreaks and owned by the same funding certain "humanitarian" projects. If you have a strong stomach and heart and can digest horrible information, you may start your search with the chemicals used in Vietnam during the war and the largest producer of such chemicals...as a hint it leads to Michigan. If you know how to search the web thoroughly you will find it in time but it takes a while and lots of cross referencing.

This recipe is definitely worth trying! Trust me, you’ll like it! (My tastebuds wouldn’t lie to you!)

I know you like it when I make this, I'll make it again when you get back <3
