Rich and nutritious rice with vegetables.

My entry is about A rich Rice with Vegetables. It is rich and very nutritious. Since it has Eggplant, spinach and pea pods.
Eggplant:
It is Antioxidant, which helps improve cellular activity. ... It also contains vitamin A, B1, B2, C and E, being very rich in minerals such as potassium, calcium, magnesium, iron and phosphorus, as well as some other components such as folic acid, fiber and carbohydrates.
Spinach:
vitamins and minerals, such as potassium, magnesium, and vitamins B6, B9, and E. It contains high amounts of carotenoids, vitamin C, vitamin K, folic acid, and calcium.
The pea pods:
Are a rich source of antioxidants and vitamins, which include retinol, B6, C and proteins such as lysine, an essential amino acid for the ideal absorption of minerals such as calcium, iron, phosphorus and zinc.
I made this delicious rice yesterday Wednesday for lunch, but I did not have time to prepare the publication.
The relationship of the ingredients I am passing on the basis of 4 servings.
(2 adults and 2 children)
Ingredients:
1 small onion
3 garlic cloves
a fist of spinach
10 pea pods
1 eggplant
2 branches of chives
1 cup of brown rice
3 cups of water
2 quarts of oil.
salt to taste.
Preparation:
Step 1: Chop all the ingredients.
Step 2: Heat the oil over low heat and add the onion, garlic and chives.
Step 3: The aubergine is added.
Step 4: Add the previously washed brown rice. and stir to brown a little and catch the taste of onion, garlic and chives.
Step 5: Add the rest of the vegetables stirring very well.
Step 6: The cups of water and salt are added. When it starts to boil it is placed over medium heat.
Step 7: Once the water is drying, place it on very low heat, place a lid, and cook until it is completely dry. (approx 15 minutes)
Once my rice was ready, I accompanied it with a simple salad of cucumbers and garlic, a touch of salt and olive oil.

saliva starts building up in my mouth, nice presentation and good selection of ingredients, spinach and aubergine for sure go good together, and you remind me to buy brown rice more often :)
