Ulog No. 27: "Coffin Bay Oysters and How to Make Oysters Kilpatrick"
Finally, I was able to cook the oysters that we brought home from our Port Lincoln/Coffin Bay trip. They are the best oysters I've ever had. Of course, we would not have left Coffin Bay without buying the world's famous oysters which this town is renowned for.
The first time I ever tried the oysters was in November 2017 when I went to Port Lincoln for a mission trip. We dined out at Del Giorno's Cafe and Restaurant and I ordered oysters Kilpatrick for the entree. Since then, I fell in love with this seafood, and whenever I get the chance or if the price is right, I'd buy it anywhere.
Two weeks ago, my aunties and I went to Cowell instead of going to Port Lincoln to do some shopping. My car had a flat tire and my husband had to fix it, so it took a while before my aunties and I actually left town that day. In the end, we just drove my auntie's car, but because it's already midday, we decided not to go to Port Lincoln anymore. We went to Cowell to do some sightseeing and shopping. However, it was on a Saturday, and by the time we got there, the shops were closed. We had lunch at the Fisherman's Kiosk which is overlooking the jetty. After that, we went to a service station to buy some oysters.

It was a beautiful little place. Not as scenic as in Port Lincoln or Coffin Bay, but I loved little towns like this, where everybody knows everybody. People are polite and friendly. On the highway, drivers use a "courtesy wave" where they lift their two fingers from the steering wheel to acknowledge each other. I have gotten used to this and I love doing it when I drive.
Anyway, the oysters that we bought from the service station in Cowell were still nice, however, the shells were bigger but the oysters were very small. Compared to what we bought in Coffin Bay, the oysters are almost as big as the shells, no wonder the town is famous for oyster farming.
By the way, it requires skill and strength to open the oyster shells as they are completely shut. We did not buy the opened ones because they were $3-$4 more expensive than the closed ones. Anyway, my husband could do the trick. So, whilst he was opening the shells, I was preparing the ingredients that I would add to make Oysters Kilpatrick.
Easy Recipe for Oysters Kilpatrick
Ingredients:
Oysters
Worcestershire sauce
Bacon
Parmesan cheese
Salt and pepper to taste
Preparation:
- Preheat grill on high.
- Cut the bacon in smaller pieces. Set aside.
Method:
- Open the shells. Put oysters in the bigger shell. Arrange the oysters on a baking tray.
- Sprinkle Worcestershire sauce to each oyster.
- Top with bacon and parmesan cheese.
- Grill for 10 minutes until the bacon is brown and crispy and cheese is melted.
It is recommended to place the oysters on top of the rock salt, I guess, to make the shells sit steadily and balanced. But I used muffin trays instead because I did not want to use/waste rock salt if I had to use a baking tray.
I can tell you that the oysters were divine!!! They were sensational. John and I had a dozen each. We cooked another dozen when we finished this lot because we just couldn't get enough of it. John also added garlic sauce in some of his oysters, because at Del Giornos, they put garlic sauce in their Oysters Kilpatrick. Again, the oysters were to die for! They're sweet, fresh and very meaty!
We actually want to go back and stay in Coffin Bay instead of Port Lincoln. Hopefully by that time the boat is already fixed so we can explore the waters and do some water skiing.

Is there anything that bacon does not go good with? I wonder would a bacon and Peanut butter sandwich taste good, of course it would have to be crunchy bacon and crunchy peanut butter. So if any one reading this tries it let me know how it taste, me I like peanut butter, and crispy bacon, but to chicken to mix the two.
I thought that the service stations in Alaska had some unique items, but oyster I don't think I have seen in one.
The only service station that sells oysters that I have ever been to is in Cowell. And I'm sure the service stations in Coffin Bay would have oysters, too.
You know what, when I get home from my trip, I will try that bacon with peanut butter toast. I will let you know how I go. Challenge accepted!
That will be interesting to read about. I love peanut butter and banana sandwiches, PB and Marmalade, PB and sharp cheddar cheese, but I have never been able to bring myself to a PB and bacon sandwich.
Have you ever heard of peanut butter and condensed milk on toast? I LOVE IT!!!
Nope, I'm not much into soggy bread, If I have a sandwich with a tomato on it it has to be semi wrapped in lettuce so it does not soggyfy my bread.
Sounds like you had fun in spite of a rocky start. A shame about the shops being closed. Good tip about the muffin tin. I don't think I will be making any oysters but may try that on the next batch of stuffed peppers.
I love stuffed peppers. I have never cooked one before, but yeah, the muffin trays might be good to use to keep the peppers intact.
