Who does not enjoy a light and fluffy dessert on a lazy Sunday afternoon?
I for one, being a self confessed sugar & spice and all things nice addict, will always skip starters so I can have dessert!

My absolute weakness is anything sweet; and my favourite is something light and oh so airy, something that just melts in your mouth; yes you've guessed right, I'm talking about Meringues!

This gal here is fussy when it comes to meringues, they have to be homemade, the store bought variety just will not pass the test!
As all cooks know, there are three types of Meringues - French, Swiss and Italian.
The one generally made by most home cooks is French Meringue - castor sugar whisked into egg whites till stiff peaks form.
Swiss Meringue is sugar and egg whites whisked over a pan of hot water till sugar melts, then whisked till stiff peaks form.
Italian Meringue on the other hand is a hot sugar syrup that is whisked into beaten egg whites till stiff peaks form. This is not such an easy meringue to make but is popular with bakers.

No guessing either that I was super excited when we were given the theme of Dessert for this week's SteemKitchen Recipe Contest 6 - Week 3 : Desserts, check it out guys and dolls if you love cooking.

So without further ado, I bring you my gluten free Dessert - Passion Fruit Meringue Parfait.

Layers of mini Meringues, Passion Fruit Cream Fluff and Kiwi Fruit

Ingredients
4 servings, prep time 1 hour, cooking time 1 hour 30 minutes
Cook's note - Meringues and Passion Fruit Filling can be made in advance

Meringues -

  • 2 Egg Whites
  • 1 cup Castor Sugar
  • Pinch of Salt
  • Few drops Vanilla

Filling -

  • 4 Passion fruit
  • 1/4 cup Sugar
  • 2 teaspoons Custard Powder
  • 2 Kiwi Fruit
  • 250 ml fresh Dairy Cream

The how-to:

  1. Make the meringues by whisking egg whites, castor sugar & salt till stiff peaks form, fold in a little Vanilla.

  2. Pipe meringues onto sprayed baking paper, bake at 120 C for 1 hour 30 min

  3. Scoop out Passion Fruit, place into pot, add sugar & bring to the boil.

  4. Thicken Passion Fruit with Custard Powder, place in refrigerator to cool completely.

  5. Whisk cream till stiff peaks form, gradually fold into Passion Fruit, reserving a little of both cream & fruit for garnishing.

  6. Layer Meringues and Passion Fruit Fluff in a pretty glass container.

  7. Garnish with extra cream & Kiwifruit

Hey @artemisnorth, I think it's more about texture, apparently the Italian meringues hold their shape better, Swiss is smoother, silkier & more dense. Now, because you asked, I'm keen to give those a go sometime soon! You're welcome any time ;) Thanks for stopping by!

Meringues are super easy @therneau, as long as you have an electric beater. You can add this to your order when you come for a visit. BTW I loved Jusi's post on the Saundettis ;)

Yeah, we have an electric beater but I think it'll likely be the case that we rock up there first before we attempt it, lol.
