Steem Kitchen Contest #2 - Cheap & Cheerful Chocolate Fudge Pudding
So I will be sharing with you another firm family favourite that has been a life saver for many a special occasion!
My Chocolate Fudge Pudding is cheap although it does not look cheap and certainly makes everyone cheerful, plus all that cocoa gives you oomph to keep you going all night long, a perfect party pud!
A rich and dense chocolate sponge with a luscious chocolate fudge sauce - I served mine with homemade custard, but it's equally delectable served with cream or vanilla ice cream.
Thank you to @steemkitchen for running this exciting Contest thanks to the generous sponsorship of @adsactly, you guys certainly have made me dig deep into the recipe archives, bringing back many fond memories plus making my family very happy with dishes from yester-year!
I was watching an episode from the 2017 Masterchef Australia and saw this old recipe being made in one of their masterclasses, was so delighted!
Basically, this is super economical, requires no eggs nor butter, so is great for those with cholesterol problems as well as vegans who can replace the milk with coconut or almond milk.
The sponge batter is topped with sugar, cocoa and water, looks real messy but the results are amazing - a dense chocolate sponge with a crusty topping and a rich and thick sauce underneath, absolutely yummy!
RECIPE
Prep time - 30 min
Cooking time - 40 min
Serves 6-8
Cost - minimal as it's all pantry staples
Ingredients

- 250ml Cake Wheat Flour
- 10ml Baking Powder
- 30ml Cocoa powder
- 2ml Salt
- 50ml Oil

- 5ml Vanilla Essence
Topping
- 250ml Brown Sugar

Method
1. Combine dry ingredients for sponge & use whisk to mix evenly
2. Add milk, vanilla and oil and mix till smooth
3. Spoon into sprayed oven dish
4. Pour brown sugar on top
5. Pour cocoa on top - do not be tempted to mix sugar and cocoa!
6. Pour cold water on top - looks real messy at this stage, but do not fear
7. Bake at 160 C fan oven (or 180 C regular) for about 40 minutes till sponge is cooked - test with a wooden skewer
8. Sift a little icing sugar on top if you wish
9. Serve with custard, cream or ice cream
Homemade Custard
- 500ml Milk
- 100ml Sugar
- 30ml Custard Powder
Place into microwavable dish, whisk till smooth
Microwave till thick and mixture starts bubbling - whisking from time to time
Extra custard for those who like their puds drowning in custard
