Now back to this Taco! The base for this taco is a Chayote Squash! Are you familiar with this squash?
I love to use this squash! Why you may ask?
- Contains no cholesterol or unhealthy fats.
- High in Vitamins, especially C! High in Potassium
- High in Fiber
- Low in Calories
- Budget friendly! One Chayote cost me $.50 USD
This recipe is so easy to make and truly budget friendly! Costs less than $4.00 Steem to make for 2 people!
Cheap and Cheerful Chayote Taco’s
I used
- Chayote Squash (2)
- Fresh Lime Juice (or any citrus) (1 tbsp.)
- Extra Virgin Olive Oil (1 tbsp.)
- Sea Salt (1/2 tsp)
- Pepper (1/4 tsp)
- Corn Shells (qty 6)
- Feta or Goat Cheese (1 tbsp.)
Refried Beans
- Black Beans (1 ½ cup cooked)
- Onion (1/4 chopped)
- Cumin (1/2 tsp)
- Chipotle Powder (1/4 tsp)
- Chili Powder (1 tsp)
Guacamole
- Avocado (1)
- Fresh Tomato (1)
- Onion (1/4 minced)
- Cilantro (1tsp)
- Garlic (1 clove)
- Cumin (1/4 tsp)
- Salt/Pepper to taste
- Dash of fresh Lime juice
I began by peeling and chopping the beautiful Chayote Squash into cubes. Toss with Olive Oil, salt and pepper and place on your favorite baking sheet.
Bake the squash at 425 for about 25 minutes. Stir frequently. The squash will be slightly browned and fully cooked. Try one, they’re tasty! Now toss the chayote with the lime and lime zest and set aside.
While the squash was baking I tackled the guacamole. This way it had a few minutes to chill before needed. So quick and easy! Peel and chop the avocado and tomato, mince the onion and garlic. Combine all in a small bowl and add the seasoning, taste and add more if you wish! Refrigerate until you’re ready to assemble the tacos.
And finally…the Refried beans. I usually buy dry beans but I didn’t have time today. Making your own refried beans is so simple and they taste so much better. I sauted the spices and onion in a saucepan. When the onions are slightly translucent add the rinsed and drained beans. Sauté more and then mash the beans. I like to leave the beans a bit chunky! Feel free to add water if you feel the beans are too dry!
Time for Tacos!
Toast the corn shells until they’re slightly browned on each side; layer the black beans on the corn shells.
Top with Chayote and sprinkle with Cheese. Add a bit of guacamole to the side.
Voila! A light, zesty Taco!

Well, I would have to actually see them. I don't believe they're available here. We only get acorn squash, spaghetti squash, a few random large ones occasionally, "yellow" squash, zucchini, etc, and occasionally some random one that some farmer decided to grow that's at a farmers market.
Oh wow @birdsinparadise, another amazing cheap & cheerful dish! I've never heard of Chayote, I thought at first it was a green papaya you were using! What is the flavour like?

Those look really good. I could see eating that for sure. Chayote is very good but a lot of people don't know how to cook it.
Right! Seasoning is the key otherwise they're not so good! Do you have a special recipe for chayote? They are so easy to work with and quite tasty. Thanks for stopping by!

Wow.... this looks so tasty from the list of ingredients and photos. I have never come across a chayote here in SA. Is there something similar we can replace it with?
Hmmm do you have butternut squash in SA? That might work, it is also mild in flavor. What type of squashes are available? The Chayote is very mild in flavor, pairs well with the bit of lime juice and zest. I'm glad you liked it, thanks for the kind words :)

Everyone loves taco night! These look great. I’ve never tried chayote but have seen it in the grocery store a few times. I always think to myself “I wonder what I could make with that”. Thanks for my answer!
