I live in Ontario, Canada and the Ontario government passed a legislation years ago to create a Greenbelt area to prevent any sort of urban development on the protected area. The Greenbelt consists of farmland and green space - I believe that it is one of the most important contributions to the future of Canada.

The Greenbelt preserves some of the most fertile farmlands in Ontario and provides many fresh fruits and vegetables to residents nearby, including myself. At our household, we purchase mostly Greenbelt grown produce as a way to support this initiative.

In particular, the Holland Marsh produces a great variety of vegetables. For example, a couple weeks ago, I made all my sandwiches by using Holland Marsh beets. This week at the supermarket, I saw many Holland Marsh grown cauliflowers. As a result, I have decided that I would use cauliflower to make all my sandwiches this week.

Specifically, for my first sandwich of the week, I made a Cauliflower Toast Sandwich with Italian sausages, spinach and mushrooms. I am going to share how I made the cauliflower toast and then explain how I put the sandwich together.

Step 1: Make cauliflower toast

I know, it sounds pretty crazy and you might wonder how on earth do you turn a head of cauliflower into bread. Guess what, it could be done and you might be surprised how easy it is.

You would need 2 cups of chopped cauliflower florets, 1 cup of granted hard cheese and 1 egg. Yep - that’s all you need. The only tip is to toast the cauliflower in a hot pan first to reduce water content so that the toast stays together during the baking process. Let me use photos to illustrate the steps:

Step 2: Put the sandwich together

I decided that I would use Italian sausages, spinach and mushroom for this sandwich. Since I had already added cheese to the toast and I wanted to watch my waistline (please don't laugh at me but it is a big concern at the moment, sigh). When it comes to sauce, the cooked cauliflower toast reminded me of hash brown and I love ketchup with hash brown. As such, I made ketchup mayo to put this sandwich together. So, here is one healthy Cauliflower Toast Sandwich that my entire family could enjoy as it is gluten free. Just to share some afterthoughts - Don’t get me wrong, I still love my bread. But I do feel great eating this cauliflower toast sandwich, because I know it’s made from healthy ingredients. It gives you the protein and fibre you need. It has tons of flavour and fewer carbs. While the texture is dense but it is not heavy like bread. To me, it’s a very satisfying experience and for sure, I would make it again and again.

Honestly this one here is a real gem of a sandwich. Love cauli when it's cooked or toasted, or done in the oven mmmm..

The sausage and greens & mushrooms sound like th perfect complimenting ingredients too!

Is the toast pan-baked, or does it go into the oven?
I have some cauliflower leftover from yesterday's dinner, so I might try making the toast today😊.

I baked it in the oven at 400. Turned once at 15 minutes mark. Total time was roughly 25 minutes. Let me know how it turns out. BTW, I am planning to make your banana toast as well this weekend... Really enjoy collaborating with you guys on this contest page. So many great ideas here, feeling inspired!

My girl already ate the cauliflower. But I'm definitely gonna try making that toast!
