The pesto and mushrooms combo + Pancetta and Prosciutto sound delicious.

I've never had fontina cheese. What is it like?
All in all excellent job on this one!
It's kind of mild and very rich and good for melting. The "real" stuff from Italy can be kind of pungent, but over here it is not and it is a very nice flavor. It is very soft, nutty, buttery, and kind of reminds you of a combination of provolone, gruyere or possibly gouda. It's a very nice flavor. If you get a chance, you should really check it out.

It is really good, but can be a bit on the expensive side depending on the brand and where you get it, but I love cheese. There is always several different types of cheese in my fridge.
