It's kind of mild and very rich and good for melting. The "real" stuff from Italy can be kind of pungent, but over here it is not and it is a very nice flavor. It is very soft, nutty, buttery, and kind of reminds you of a combination of provolone, gruyere or possibly gouda. It's a very nice flavor. If you get a chance, you should really check it out.

It is really good, but can be a bit on the expensive side depending on the brand and where you get it, but I love cheese. There is always several different types of cheese in my fridge.
