First and foremost I would like to thank @jaybird for hosting the #steemitsandwichcontest. I came across this two weeks ago and as a newbie to Steemit. This is such a fun contest and an interesting one if you are a foodie and like sandwiches. Some of the creations people come up with are simply amazing. It was on purpose. :) So without further ado, anyone who likes egg salad sandwiches, here is a step-by-step guide as to how I made mine. Be warned, there are lots of photos!

For Week #55 I wanted to do something a little more traditional. I went straight for Egg Salad. It's hard to make for just one person so I had to kind of "eye-ball" the ingredients. I had enough left over for another sandwich for tomorrow.

* lettuce* mayo or salad dressing* pickle relish
* mustard* 2 slices crisp bacon* salt & pepper to taste

Directions:

  • For me, this is the best way I have found to make the perfect hard boiled egg. I know I have probably seen it on some cooking show or heard about it from some where before, but I honestly cannot remember where or how I came about the process. Gently place your eggs in a pot large enough to give them enough room so they aren't cramped together and fill the pot with enough cold water to cover the eggs. Place a lid over them and bring them to a boil. Once they start to boil, set a timer for 5 minutes. After 5 minutes of boiling, remove from heat, leaving the lid on, and let them rest for 8 minutes. (Note, add just a splash of vinegar to keep the eggs from cracking. This should not affect the taste unless you pour too much in. Only a splash will do)

  • While your eggs are boiling, you can cook your bacon to a nice good crisp. Make sure it is crispy because you do not want it to get soggy if you have extra and want to eat it later. Once the bacon is cooked to your liking, place on a paper towel to help get rid of some of the grease.

  • Gather the rest of your ingredients and wait for your eggs to cool down.

  • Toast your bread if you prefer.

  • Run your eggs under cold water for a few minutes until they cool down enough to handle. Gently tap the ends of each egg, one at a time, on a hard surface, and then gently roll the egg, apply light pressure, just enough to crack the shell, and return it back to the cold running water and peel. This makes it easier to peel the eggs. Discard the egg shells.

  • Place the peeled hard boiled eggs in a bowl large enough to hold them so you can mix all of your ingredients together.

  • Use a fork and start mashing the eggs to break them up.

  • Salt & pepper the eggs.

  • Add mustard, mayo (or salad dressing), and about a tablespoon of pickle relish (or more if you prefer), and start mashing everything together until you get your desired consistency. Some people prefer their egg salad a little lumpy, while others like it really creamy. If you like it more creamy, add a little extra mayo.

  • Taste what you have made to see if you need to add any more salt, pepper, mayo or mustard. This is all preference, but you really need to taste it to make sure it is to your liking.

  • Once you get your mixture to your liking, crumble the bacon and add it on top. Then gently fold in the bacon so it is incorporated into your egg salad.

  • Assemble your sandwich.

  • And there you have it! You can serve it up with chips, or if you are health conscious, julienned raw red bell peppers go great with it!

Those eggs are perfectly cooked! Eggs and bacon are a classic but I never thought of adding it to an egg salad. What a great idea!

I love a good egg salad sandwich! Great egg salad is hard to come by. I think you nailed this one. I absolutely love how you put the bacon directly into it as well. solid choice.

Sometimes it good seeing a traditional sandwich made well for this contest. With all the insanely creative sandwiches tat come through, sometimes ppl forget that a simple BLT or grilled cheese is all you need ;)
