@progressivechef is back again with some surprising assemblages for the
STEEMIT CULINARY CHALLENGE of this week!

This is my 3rd participation in this amazing contest and as usual I will propose a dish which made honor to my style ... Something never heard of!

I have been quite successful with the two previous ones, winning a most creative entry on my first participation , which you can check here :

My entry for this week is composed of oranges, grapefruit, cucumber, sugarcane and roses! Yes you heard it right, ROSES!!!

Rosy Citrus and Cucumber Granita

For this surprising Granita you will need
• Oranges – 2pcs
• Grapefruit – 1pc
• Cucumber – 1pc
• Sugarcane – 1pc
• Mint – 2 sprigs
• Sugar – 10gms
• Eggwhite – 1pc
• Roses – Some petals

Take out 3 segments each from the oranges and grapefruit, then juice the rest!
Cut the cucumber in halves. Juice half and clean the other as seen below above, like a boat.
Peel the sugarcane and cut 4 nice batonnets in it!
In a bowl , separate the egg and keep the white only to be used!
Wash the mint leaves.

First thing, mix both the citrus and cucumber juice together and place in a large glass bowl! I did not add any sweetener as it was already sweet! Keep it natural guys!
Place it in the deep freezer for 2 hours!

After the first 2 hours, it will start to freeze!
Take it out and with the use of a fork, draw ice from the edges towards the centre!
Put it back in the deep freezer and repeat this process minimum twice!

The most exciting part is now!
Take one petal by one and dip in the egg white!

Then sprinkle with white sugar.

Place a baking sheet on a baking tray and delicately dispose the petals!
Look how beautiful they look!
Put to dry in the oven for 2 hours at 75 degrees

This is how they will look like after the drying time in the oven!
Magically the color will change too and the smell will be just extraordinary!
Maybe someone can tell us why this happens, I personally don't know!
The petals will be crispy - I ate so many before completing the recipe!

As i had quite some petals left, I even made some ice cubes with roses!
They turned out to be very beautiful.

This is how I actually plate the granita! Put it in the second cucumber half and place the citrus wedges, mint leaves and crispy petals on top!
Do not forget the sugarcane sticks!
To keep it longer, I placed it on a bowl with rose ice cubes!

It was so refreshing and when you mix all together it is an explosion in your mouth!
The crispy roses flavor just bring this granita to another level!

Those who like more sweetness, just chew on the sugar stick for additional sweetness!

Very nice presentation and interesting recipe @progressivechef! I did not know you could do that with roses! It looks beautiful and yeah, delicious too.

You can do a lot of things with rose petals @arrliinn, you can make amazing infusion, dry up and used in various recipe or just eaten raw in salads!
