Pasticettu du risu (Rice cake)

Hello Steemians,


I am Christel, and I live in France on an island called Corsica. I am happy to announce that this is my first time participating in the #steemitculinarychallenge.
Today, I'm going to make you a traditional Corsican dish. It is a dish of the Corsican Cape, the tip of the island.
It's called Pasticettu du risu (rice cake).

INGREDIENTS

For rice cakes:

  • 250 g of round rice
  • 180 g of emmental
  • 2 eggs
  • Oil for frying
  • Wheat flour

For the sauce:

  • 500 g minced beef meat
  • 1 bowl of homemade tomato sauce (preferably made "homemade" tomato sauce. I make it in jars in summer, and I have it for the whole winter!)
  • 4 small mushrooms of paris
  • 1 onion
  • 3 cloves of garlic
  • 3 tbsp olive oil
  • 1 small can of tomato paste
  • 10 green olives
  • 25 cl white wine
  • 1 bouquet garni
  • 2 sprigs of parsley
  • Salt, pepper, and cayenne pepper
  • 30 cl of water

Directions

Part 1

1- Cook the rice for 30 minutes in a large quantity of salted water. Turn off the heat, cover and let stand for 2 hours.
2- Drain and squeeze to remove all the water.
3- Leave the rice in the strainer so that the water continues to flow, and put in the refrigerator until tomorrow.
Don't worry, the rice is overcooked and sticky; it's normal.

Part 2

1- Prepare the vegetables:
Rub the mushrooms well and peel them.
Peel the onion and chop.
Peel the garlic, remove the germ and mince.
Finely slice the parsley.

2- Prepare the sauce:
In a pot, pour the oil and sauté the onion. Add garlic, parsley, and meat, and stir.
Deglaze with white wine, season with salt, pepper, and add the chilli pepper.

Add tomato sauce, concentrate, mushrooms, and olives.
Add 30 cl of water, the bouquet garni, and cook for 2 hours on low heat.

Part 3

1- Recover the rice from your refrigerator and add the eggs and cheese. Mix well with your hands.


2- Make balls in your hands and then flatten to make wafers.Sprinkle them with flour.
3- Store in the freezer for at least 1 hour. This is important for cooking.

Part 4

1- Heat the oil in a frying pan over high heat, and place the patties. Cook for 20 minutes, turning them over halfway through cooking.

2- Drain them on paper towels.

It's finished!!!
