It’s a GOOD day for some Beef Pot Roast NOMNESS! - [Moments from My INSTAGRAM World...]

So, my stove plates keep shorting my power (grrr)... so until my brother can come fix it next week, I have to use the oven... so I decided to do a beef pot roast. I have the most amazing cast iron pot which can go into the oven up to 170 degrees Celsius.
Pot roasts are wonderfully simple. I threw the roast into the pot along with some onion, garlic, fresh thyme, carrots, sweet potato, chutney, stock, brown onion soup, red wine, salt, pepper and seasoning and water. Popped the lid on and that's that for 2.5hrs at 160 degrees. Nothing beats a little comfort food on the weekend! Cheers to that! Hope you are all having a super Saturday! Don't forget to be FABULOUS!

Looks delicious. This was a meal that I can remember my mother making on a regular basis. My lovely wife prepares a great Pot Roast. She prepares it in a crock pot and lets it cook on medium for most of the day. By the time all the vegetables and roast are done the aroma has permeated every cubic inch of our home.
The roast just falls apart, leaving the meal to be enjoyed with one less utensil, a knife.
The slower the better!!!!!! The ultimate comfort food! :)
