Chocolate Cheesecake

Ingredients :

For the base :

*125 grams of shortbread cookie;
*60 g of butter;

• 1 tablespoon of cocoa.

For filling:

*175 g of dark chocolate;
*500 g of cream cheese;
*150 g of powdered sugar;
*1 tablespoon cornstarch or custard mixture;
*3 eggs;
*3 egg yolks;
*150 g of sour cream with 20% fat content;
*½ teaspoon of cocoa;
*1 tablespoon of hot water.

For glaze:

*75 g of dark chocolate;
*125 ml of creamy cream;
*1 teaspoon of liquid honey.

Preparation

Grind the cookies in the blender. Add the melted butter and cocoa and chop again. Put on the bottom of a mold with a diameter of 23 cm, pound it and put it in the freezer.

Melt the chocolate in a water bath or in a microwave and cool. Mix cheese, powder and mixture for cream or starch. Add eggs and yolks, mix, spread the sour cream and mix again.

Dissolve the cocoa in hot water and add to the filling along with the melted chocolate. Stir until homogeneous.

Distribute the filling on a chilled base and place in a preheated oven for 180 ° C for 50 minutes.

Melt the chocolate, cream and honey, cool a bit and pour a cold cheesecake.
