Dessert for the weekend

Hi friends of Steemit I hope you are well, it is Friday so smile, the pumpkin is one of my favorite vegetables, with it you can prepare many recipes both sweet and salty, it is cheap and you get at least in Venezuela all year .

It makes me a dessert this weekend, but I do not want anything complicated, so I have this recipe for perfect pumpkin cookies to spend this weekend at home while I rest a little, I will enjoy a delicious dessert. In this recipe you can substitute the pumpkin for apple, the recipe only has vanilla but you can add another species to your taste such as cinnamon.

Ingredients for about 50 cookies:

  • 100 gr of butter
  • 250 gr of brown sugar
  • 300 gr of wheat flour
  • 3 eggs
  • 200 gr pumpkin puree (or a large raw and grated apple)
  • 1 pinch of salt
  • 1 teaspoon vanilla extract

For pumpkin puree:

The day before or hours before, we make the pumpkin puree. We take a piece of pumpkin and remove the seeds and skin. We make tacos and steamed them for 15 minutes, the water that we put down can be aromatized to give a soft touch (putting a cinnamon stick). You can also boil it in a pan with water, we will only have to drain it well so that it is not watered down, we will crush it and let it cool before using it for cookies.

Preparation of cookies:

The whole elaboration process is best done by hand, with a wooden spoon and a large bowl, if we do so, we incorporate little air into the dough and improve the presentation of the cookie. We preheat the oven to 180ºC, first, beat the butter with the sugar until we get a texture of cream, adding the eggs, one by one, stirring until they are incorporated, then add the cold pumpkin puree. Now, we incorporate the sifted flour at once. We mix everything very well so that there are no lumps, the dough will be ready when it has a uniform texture. It is a fairly fluid mass, throwing liquid, to bake it, you will have to distribute it with a spoon, making piles on the plate, Leave a distance of about 3-5 centimeters between them, as the oven will put in its place piles and expand . Bake at 160 ° C for about 15-20 minutes. Everything will depend on the size of the cookie, above all it will be necessary to watch because they burn easily.
