In case that picture and that title didn’t sell you

(I don’t know who doesn't dream of swimming in the frothy, whipped topping of this you-won’t-believe-it’s good-for-you piece of pie!) let me also just say that this wonder recipe is also:

  • Gluten Free 🍞🚫
  • Dairy Free 🧀🚫
  • Vegan 🥚🚫
  • Raw 🍓 ✔️

I’m just going to say one little thing:

you're welcome.gif

What You Need:

pie ingredients.jpg

Nut-tastic crust 🥜

• 1 cup soaked almonds
• 2 cups shredded dry coconut
• 2 tbs cold pressed organic coconut oil
• 3 tbs coconut nectar (or maple syrup, I use coconut nectar because it’s easier for me to get than maple but both will do the trick of making this treat tasty sweet!)

Chocolate-heaven-‘sent’-er (the middle-y area) 🍫

• 1/2 cup coconut nectar
• 3/4 cup cacao powder
• 1/3 cup cold pressed organic coconut oil
• 1/4 cup water, added slowly (as needed)

A surprise layer of strawberries within 🍓

• A handful of strawberries sliced thinly

Coconut cream dream (whipped wonder) 🍰

• Meat of 2 young coconuts (or you can buy coconut cream pre-packaged if you prefer)
• ½ cup cold pressed organic coconut oil
• 1/4 cup coconut nectar/maple syrup
• Coconut water (as needed)
• Pink Himalayan sea salt
• 1 tsp Vanilla Extract

To Top it All Off: 💜

• Chocolate chunks
• Coconut flakes
• More sliced strawberries!
Why not just throw more of what we love on top? It makes it extra yummy in the tummy!

This Is How We Do It

Start off by eating something first otherwise you’re not going to be able to finish this! It’s so tempting to eat it as soon as it’s picture ready but it’s worth the reward to wait it out and give it some time to cool down in the fridge or freezer if you’re enthusiastic ;)

Grab all of your nutty crust ingredients and put them in a food processor (difficult, I know!) ;) You want it to stick together! Once you notice it’s blended into one loving, delicious concoction, take it and press it into a pan. I push mine down pretty firmly into the pan as I find it cuts into sections better that way! You can put this into the fridge for now to set.

For your decadent chocolate center, again all you have to do is add all of the ingredients into a food processor (you don’t even need to wash it out! All the ingredients commingle later anyway!) Add coconut water as needed but don’t make it too wet! You want a thick, creamy layer, not a melty, messy one!

Spread this delicious ‘frosting’ over top of the nut base and put into the fridge to set. If you’re in a hurry to eat this ASAP, go ahead and speed things up by putting it in the freezer- I certainly won’t hold it against you (what do you think I did?) ;)

Meanwhile, since things are getting hard. I know you want to eat it already, trust me, I feel you, I have been there. Let’s distract ourselves by cutting up some strawberries! Hey, let’s eat some while we’re doing this! See? Yum! Strawberries are almost as good as Chocolate Strawberry Coconut Cream Pie.

Let’s make the coconut cream!

If you’re lazy (I mean eager) and yours is pre-made, dump it out of it’s container and add the following ingredients to it. If you’re like me and live for making things from scratch, let’s get that coconut meat out and into the food processor!
(Can you believe that I only got a food processor last week?! I’ve been traveling for so long, I don’t have a full kitchen yet and I am thrilled beyond belief to have one of my all time favorite appliances by my side!)

For the DIY’ers- add in water slowly!

(Only as needed) until you get a thick, creamy mixture. I got carried away with myself and didn't snap any photos of this! I'm sorry I was so busy eating it, I forgot to share this part with you!

For everyone:

Add in the sea salt, nectar of choice, coconut oil and water and blend. You want it to be creamy, chunky even depending on your preference. I like mine to be thick, not at all runny!

Now that you have your cream ready, I bet you you can take your pie out of the cooling device you’ve chosen and start strategically placing your strawberries all over it!

Once you’re satisfied with that part, go ahead and layer it with any cream you have left over (I know you’ve been eating it!)

Dress that little wonder up with whatever tickles your fancy. I loaded mine up with extra strawberries, chocolate sauce and coconut flakes. Not only does it look prettier, it also makes it irresistible ;)

Hmmmm.... I think it could use a little bit more "oomph" don't you? Let's try again!

pie topping 2.jpg

Still not quite perfect... Let's give it one more go!

coconut cream pie.jpg

That looks much better, don't you agree ;)

Now is the hard part. Say goodbye to your little friend… the fridge awaits…let the whole pie chill (use the freezer to speed this up but don’t leave it too long or it’ll be too hard to cut and then you’ll have to wait for it to thaw in order to eat it and that would be crazy!)

Give it an hour to chill out, collect itself and get ready for your the greatest day of it's life- giving you intense sensory pleasure! It’s currently living it up, partying with the most scrumptious ingredients it’s ever had the chance of mingling with!

After you’ve tested your patience, go ahead, dig in and don’t forget to share 😘

Pie comes out best if you have a spatula... what you see here is the artwork of a knife) 😂

Yum yum yum! I love your food @heart-to-heart because you only use good quality and healthy ingredients, which means anyone can enjoy a treat like this without worrying about adverse effects. I love nutritional treats... they're the only kind worth having IMHO! Thanks so much for sending me this link, it looks soooooo gorgeous and makes me drool a little too hahah :-)

Well I remember us chatting and me teasing you about it so I had to share! I made it to add into SCC last week but forgot to add in the sign! Kids LOVE this treat! Thank you so much! I forget sometimes being all lost in my world that this is still very much alternative cooking! I hope that through posting recipes like this that we can change the idea that sugars and toxins and artificial ingredients are needed to make things taste good because it is just not true! I saw something about falafel on your blog that I am going to have to make sure to read and make ;) I love hanging out with you my food-soulmate :)

Yeah this is one of the best things about this community - discovering the surprising wealth of 'kindred foodies' who use good ingredients like we do. In my 'real life' (not sure what to call it!) I know very few people who are savvy to toxins and sugar and processed crap, and don't even believe me if tell them something's really harmful like Heinz Baked Beans for example full of MSG but they ignore my warnings because they have it in their heads that beans are healthy and that's that. Plus most of them still believe these commercially reputable manufacturers wouldn't be 'allowed' to poison us, that our governments would step in and protect the public. Sigh! So my point is - it's reassuring being on Steemit and seeing how people are awakening to the truth about food, gradually, but it's happening. And I think people like us have a massive influence on others... like the SCC for eg is followed by a lot of people and surely they're learning important things about good & bad ingredients... which is grrrrreat!!!

Oh my goodness you just opened my eyes. I forget that not everyone thinks like me when it comes to food but I totally understand. I had many breakdowns giving up what I thought was good for me on this journey of mine. I actually ended a lot of relationships over it as well, bad influences I felt. It can be hard but I think you're right, this is allowing us to show that there is a way around all of the 'bad' and 'not good for you' foods without compromising taste. All people need to do is take a look at your page to be convinced ;) I am really loving this movement and want to put a lot more effort behind it as I think it's incredibly important! I suppose being outside of the western world, looking in, I have created a bubble for myself where this is beyond normal. I also live in a town that is cultured on veganism and healthy life practices so I am lucky to be so close to those influences. Let's keep fighting the good fight my dear, I am happy to be here with you! I will follow you til the end! ;) XO
