How to make Chicken Parma with Caramelised/Slow Fried Onions and Mushroom Gravy.


Grab your favourite powdered gravy and place a couple of table spoons into a bowl of cold water (approx. 1 cup). Mix and set aside.

This will ensure you have a nice smooth gravy. I like to use lamb & rosemary or beef gravy.



Wash and slice up some button mushrooms and thinly slice 2 brown onions.

It is important to thinly slice the brown onions, otherwise it will take a much longer time to caramelise and fry the onions.


Caramelising and Slow Frying The Onions

It is imperative you continuously stir and keep an eye on the heat when cooking your onions. Otherwise the flavour will not develop and you end up with burnt flavours instead. By stirring you are evenly cooking the onions.

  • Pop your thinly sliced onions into a pot with a generous amount of oil.
    I like to use peanut oil.
  • On medium heat, cook the onions until translucent with some parts starting to brown. Remember to continuously stir with a wooden spoon or chopsticks.
  • Once you start to see some golden brown parts, (third picture) turn the heat to low and continue to cook until majority of the onions are golden brown (fifth picture)
  • Remove majority of the onions into a bowl to cool.


Note: It will continue to cook while it cools down, this is why we remove it from the pot when there are still some white parts.


Quick and Easy Mushroom Gravy

  • Using the remaining fried onions and oil in your pot, pop in your sliced mushrooms.
  • Season with salt and pepper then stir to evenly coat the mushrooms.
  • Once the mushrooms are slightly soften, give your premixed gravy powder/water a quick stir first then pour it into the pot.
  • Turn up the heat and continuously stir til the gravy has thickened.

This process shouldn't take long unless your water to powdered gravy ratio was too high. If this is the case, just continue to heat & stir to evaporate some of water until the gravy has thickened to your liking.


Chicken Parma Grilling

When I first made chicken parma, I use to shallow fry my chicken, but now I just grill them. To make it easier, pre-heat your oven and turn your grill on at the same time.

  • Place your chicken schnitzel onto a silicone mat or baking sheet and grill under medium heat until golden and crispy.
  • Flip the schnitzel over and grill the other side til golden and crispy.
  • Once cooked, spread a thin layer of tomato paste over each schnitzel.
  • Then cover with ham and top with cheddar cheese.
  • Grill over low-medium heat til the cheese has melted and cooked to your liking.
  • Remove and place onto a serving plate.
  • Garnish with Mushroom Gravy and Caramelised/Slow Fried Onions.
  • Serve & Enjoy!

But before we do, it needs to pass InspectorSoju's smell test before we can eat in peace.

hahahaha Soju is a fussy cat, she knows her brands. She likes Maccas cheese, Singles cheese and the Laughing Cow cheese. We tried to give her another brand of cheese that looked like Singles and she would not eat it. She just sniffs it, then gives me the disgusted look and walks away.

Hahaha... InspectorSoju is exactly like my cat was! Had to check everything out... lol... My mum taught me the exact same thing about frying onions - to remove them from the fire before they turn totally brown, as they continue cooking after they're out! ;)

Hahahaha cats are funny creatures.
Nice, I wish I had someone tell me that tip when I first made the onions. I found out the hard way. lol
