Sunday is Craving Day! "Filipino Dish"

It's been a week since I craved this vegetable dish but I can't cook it because I'm all alone in the house. I want to eat it with my son and he likes it when it is newly cooked.

These are my ingredients

  • squash
  • eggplant
  • luffa
  • string beans
  • gumbo
  • malabar spinach
  • mongo
  • coconut milk
  • ginger
  • onions
  • tomatoes
  • lemon grass
  • salt
  • seasoning
  • anchovy
    (If you don't like anchovy, you can have fried fish or pork meat if you wish)

Procedure

  1. Boil the mongo beans until it soft
  2. Put-in the ginger, onion, tomato and add a little amount of water then let it boil.
  3. Put-in the lemon grass, anchovy, and all the vegetables except the luffa and malabar spinach.
  4. Pour the coconut milk
  5. Add 1 pinch of salt and little amount of seasoning, then cover it and let it boil, cook in a medium heat for about 10mins.
  6. Put-in the luffa and malabar spinach then stir and turn off the flame.
    Let it stay for 5 minutes and then ready to serve. It is best with chilies squeezed on your bowl.
