Today I will join in a contest that was initiated by @jenesa, hello dear I really appreciate you for organizing this contest it brings back to life my childhood memories and it reminds me of home sweet home. Ekpangnkukwo: is one of Nigeria's special delicacy it is a native food for Akwa Ibom and Cross River people. It is one of the meal we used serve groom family on a traditional marriage day, we called it (udia ibenehe isen) we also used to serve a woman who newly put to birth with this meal, the meal normally help the woman to look healthy!
I like this food so much because of all the orishirishi(small chops) that follows it, and it's so palatable, we called it chop one chop two😂 meaning if you have a taste of a plate of it, you will definitely demand for another one. The food is not only delicious, but it has a lot of health benefits you will not want to miss. This includes:
- it improves the heart health
- it packed with antioxidants, that will help in fighting deadly desease
- it lowers bad cholesterol
- it cures inflammation
- Cocoyam sprouts is a good source of Vitamin C and vitamin A etc.
INGREDIENTS NEEDED:
- Cocoyam
- Water yam
- Cocoyam sprouts
- periwinkles
- Cray fish
- Bonga fish
- Pepper, salt 🧂 and seasoning Cubes
- palm oil
- Cow 🐄 skin
- Curry leaves
PREPARATION:
- Peal the water yam and the Cocoyam, wash and grate it
- Next cut the Cocoyam sprouts into pieces and wash it
- wash your pot to be clean, then pour Palm oil inside
- used the sprouts and wrapped the Cocoyam and water yam mixture
- wash, seasoning and cook the cow skin to be be soft
Wash your periwinkle and keep aside
pawn your crayfish, bongafish and fresh pepper and and to the pot
add seasoning Cubes, and salt to taste
- boil hot water and add to it. Then put the pot on fire and allow it to cook
- after 15mins use knife and cut the paste to smaller sizes
- add the cook cow skin and periwinkles to the food
- plug, wash and chop your curry leaves and add to the food.
- Allow it Cook for some time 💥 Boom your ekpangnkukwo is ready to be served!
I grew up to love this meal so much because my momma used to prepare it for us at least once a week. Till now I used to cook ekpangnkukwo in my house, and each time I do, I recalled how my siblings and I used to gather around to wrapped up the paste, and we used to eat together! The meal is Time consuming but it worth it. Thanks for reading through! I love you all💕
