Korean Stew
I like experimenting with food and trying different cuisines so tonight I cooked a Korean chicken with kimchi, their unique cabbage dish and sticky, ideally Japanese sushi rice.
The prep took less than half an hour with the Chinese cabbage squeezed after being left with salt on before soaking in rice vinegar with chilli flakes, sugar and garlic.
Blending smooth and then frying the onion and ginger paste is what gives this dish flavour so keep tasting it.
After these crucial five minutes I added the protein, quite large chicken legs, followed by potatoes and carrots.
The soft potato cubes were my favourite, they tasted nearly like chicken, so when I make this dish again I will make sure I double their quantity.
The rice of course I cooked last in a large lidded pan and served the meat and veg on top of it.
This stew is well know in Korea and locals call it dakdoritang.
What it has the most of are actually Korean chilli flakes, known as gochugaru. They make the dish taste a bit sweet and very smoky whilst giving it just a slight touch of heat.

Thanks to the world of dramas and kpop I have been able to get to know the culture of the Koreans, and without a doubt, their food is one of the things that most attracts my attention.
