Я продолжаю знакомство с блюдами из необычного московского кафе Арт-кафе «Рукав» (1, 2, 3). Новое блюдо опять не то, чем кажется. Казалось бы, подано известное русское пирожное под названием Наполеон. И, да, это Наполеон. Но нет, это не десерт. Это горячее блюдо из птицы: Наполеон с уткой.

I continue my acquaintance with dishes from the unusual Moscow cafe Art-cafe "Rukav" (1, 2, 3). The new dish is again not what it seems. It would seem that the famous Russian cake called Napoleon was served. And yes, it's Napoleon. But no, it's not a dessert. This is a hot poultry dish: Napoleon with duck.

То, что это фирменное блюдо именно этого кафе подчеркивается тем, что подаётся оно на фирменной тарелке. Сверху можно увидеть вензель с надписью «Рукав».

The fact that this is the signature dish of this particular cafe is emphasized by the fact that it is served on a signature plate. Above you can see the monogram with the inscription "Rukav".

Наполеон как пирожное или торт – это классика русских и советских десертов. Аналогичные десерты существуют во многих странах. В России, других странах бывшего СССР, в США, а также скандинавских странах используется название «наполеон». Во Франции и в Италии аналогичный торт называется «мильфей» (фр. mille-feuilles [mil fœj]): тысяча слоёв или тысяча листов В Великобритании — Vanilla slice или Cream slice. В Венгрии — Királyi francia krémes («французский королевский кремовый»). Это торт из слоеного теста, с масляным или заварным кремом. Правильно приготовленный – тает во рту.	Napoleon as a pastry or cake is a classic of Russian and Soviet desserts. Similar desserts exist in many countries. In Russia, other countries of the former USSR, in the USA, as well as in the Scandinavian countries, the name "Napoleon" is used. In France and Italy, a similar cake is called "mille-feuilles" (French mille-feuilles [mil fœj]): a thousand layers or a thousand sheets. In the UK - Vanilla slice or Cream slice. In Hungary - Királyi francia krémes ("French royal cream"). This is a cake made of puff pastry, with butter or custard. Properly cooked, it melts in your mouth.
О происхождении названия «Наполеон» ведутся споры. Мне нравится версия, что десерт под таким названием представили в России в 1912 году, когда страна готовилась отмечать 100-летие победы над Наполеоном Бонопартом.	The origin of the name "Napoleon" is disputed. I like the version that a dessert under this name was introduced in Russia in 1912, when the country was preparing to celebrate the 100th anniversary of the victory over Napoleon Bonoparte.
В Наполеоне с уткой взята идея слоеного теста с начинкой.	Napoleon with duck takes the idea of stuffed puff pastry.

В этом блюде, которое я заказала себе, были идеальные слоеные коржи, очень нежные и тающие во рту. Начинка из мяса утки с соусом отлично сочеталась с нарезанными яблоками и сладковатым соусом из мандаринов.

In this dish, which I ordered for myself, there were perfect puff cakes, very tender and melting in your mouth. The duck meat filling with sauce went well with sliced apples and a sweet tangerine sauce.
