보양식의 품격, 녹두로 더 깊어진 국물맛
지하철 2호선 서초역 인근 3대삼계장인에서 맛본 삼계탕.
이 녹두 삼계탕은 짙고 뽀얀 국물이 뚝배기를 가득 채우고 있어 보는 순간부터 깊은 맛이 기대됩니다. 부드럽게 삶아진 닭고기, 그 위로 듬뿍 얹힌 대파와 실채 인삼이 고소한 풍미를 더해주네요.
국물은 일반 삼계탕보다 한층 더 걸쭉하며, 녹두가 곱게 갈려 들어가 있어 한입 머금는 순간 구수하고 진한 맛이 입안을 감쌉니다.
닭고기는 속까지 촉촉하게 익어 퍽퍽하지 않고 부드러우며, 담백한 육질이 진한 국물과 잘 어우러집니다. 고급스럽고 정갈한 비주얼 속에 건강한 맛이 녹아든, 전통이 살아 있는 보양식의 느낌을 받았네요.
단, 한그릇에 2만원 근처가 마음이 편하진 않았네요.
