I have eaten so many special food but I want to talk about this particular one called Ekpang nkukwo, because it is one of its kind.
I am from Nigeria, precisely Akwa Ibom state. This is one of our local delicacies that is mostly prepared during festivities, it is not a common food because of its uniqueness and mode of preparation. In any occasion that this food surfaces, most people would give up other food just to have or eat Ekpang nkukwo, it is as serious as that.

The food is considered to be a balance diet; because it is very rich in carbohydrate, protein, fat and oil, infact the food has all the six classes of food in it. It is highly recommended to the nursing mothers, that's women who just put to birth. Ekpang nkukwo has the properties of making someone to add weight if eaten consistently. That is why it is term as "ndidia Eka uman"(meaning, food for a nursing mother).
It will make them to grow fatter and fresh. As an African, especially in Nigeria, it believe that when once you put to birth newly, you must add weight to show that you are well taken care of. But nowadays every nursing mothers want to maintain their weight and stay in shape for their husbands 😀 so that the man would not look outside,that is to go after a younger girl to cheat on them.

You see Ekpang nkukwo, it is best enjoy using your bare hands to eat not spoon, that means you have to wash your hands thoroughly.
My darlings, don't mind the guy facial expression, it's cause from the effect of the food 🤣🤣. You can even see where he's seated to eat the food, maybe to align with nature and communes with them while enjoying his Ekpang nkukwo.😀.

Well most times I do eat the food in a traditional marriage or we can just decides to prepare it at home but you must find something else to eat before you start because the preparation is a long process.

Let me share the recipe and ingredients used in preparing this special food

Ingredients:

• Cocoyam
• water yam
• water yam leaves
• periwinkle
• assorted meat
• crayfish
• seasoning cubes
• fresh pepper
• dry fish
• any sea food of your choice
• Red oil (palm oil)

Peel off both your water yam and cocoyam, wash it clean, either you crate them with a Crater or you blend it using a machine, after that mix the two together. You have already cut your cocoyam leaves into smaller size, you then use the leaves one after the other to wrap them, by cutting the mixture on to the leaf and fold it.

Note:

You are wrapping it very tiny, you'll repeat the process until you finish wrapping all the crated mixture into a pot.

Then after that you enter the cooking proper, some people prefer boiling water to pour into it while some simply place the pot on fire and pour water into it allows it to simmer for a while, then garnish it with your seasoned meat or whatever ingredients you wish to add; your periwinkle, seasoning, spices, your red oil cover the pot, let it simmer and mix the ingredients. Then Booooooom!!!! Your delicious Ekpang nkukwo is ready

🥘Why is this food the most special food you eat in your life?

Why this food is most special to me is because of its natural nature, and richness devoid of all those chemical processed food. All the main ingredients except the seasoning cubes are hand picked or gotten from the farm freshly. No application of any chemical whatsoever during planting, and it doesn't go through any manufacturing process which can pose as a threat to human's health.
That's why the food is the most special food I have eaten so far.

🥘And why would you encourage everyone to eat this food?

I'll answer that question by saying that, we all eat food either to put an end to hunger and for nourishment. Therefore it is advisable that we eat healthy, not just eating for eating sake but we must endeavor to eat a balanced diet (food) that would help nourish and build our body systems not eating food that would be harmful or a threat to our health.

I know this special delicacy might not be well known especially to the outside world, but anytime you are privileged to visit Africa, Nigeria and you see this food surfacing anywhere, my darlings grab it with both hands 😀 because of it natural richness and heavenly taste, then come back and thank @tripple-e, What are friends for,if not to have each other backs😀..

If someone asks us to choose a special food from the list of numerous foods we eat throughout our life, then it becomes a very challenging thing for us. However, I am very happy to see that you mentioned your local popular dish Ekpang nkukwo to meet this challenge.
As the food is very delicious, this food is organized in important events in your area. And I can understand how delicious the food can taste by the satisfying reaction of your husband.

Ekpang nkukwoHonestly speaking that I knew first time about the meal and recipe you share in your blog but I am sure it definitely tasty and healthy as well and prepared at festivals in your country Nigeria,the picture shown that how tamping flaverd food you eaten .

Hello my friend @tripple-e, indeed Ekpang Nkukwo is the most wanted food when seen in any occasion. That's because it carries all the eatable and that makes the food balance in diet, and its very delicious. Though the process of making it is very tedious especially when preparing it in large quantity, but after eating it, its worth the time. I wish u success in this engagement challenge.

It's amazing on how you have narrated our local delicacy so well, you make me wanna have a taste of it right now, infact I will prepare it this week because Ekpang nkukwo is a balance diet on its own, with all the eatables you will put inside of it while cooking, you can't resist it. But the problem associated with it is the long process of preparing it, if you are not a fast cooker you will end up using a whole day to prepare the meal because of the step by step procedure involved in it, but the stress is worth it anyway. At this point I wish you good luck in your post.

This is a nice topic for contest. we all donot like the same food. We have different choice. Some like junk food and some donot like junk food .They like normal food.When I read your post I come to know that you like Ekpang nkukwo .I think we all should eat healthy food because of our health.So, we should be careful about our health and not to take junk food.
