"Kharak" is the unripe stage of harvesting dates. These dates are the freshest form of edible dates but are also the most difficult to get your hands on. You can only enjoy them if you live in a date-growing region.
These are the raw form of the dates we all know and love. They have a crunchy texture and an astringent flavor with hints of honey and pears.
