My today’s recipe is Sri Lankan Coconut Roti, It is known as Pol Roti in Sinhalese. As you all know Sri Lanka is a tropical island which has plenty of Coconut groves. Most Sri Lankan traditional dishes are prepared using Coconut.
Coconut is my main ingredient in today’s recipe. We use Coconut in different forms, We use Coconut oil for frying, Coconut water, grated coconut, and Coconut milk for most of the curries. This Coconut roti recipe is passed on to generations and still it is continued. All Sri Lankans like to have Pol Roti with a cup of ceylon tea.
Pol Roti can be found anywhere in Sri Lanka. You can try it in a normal shop or in a five star hotel. This is one of my favourite traditional dishes.I like to enjoy having Pol roti when the environment is cold and rainy.
At our home most of the time we prepare Pol Roti for dinner but it is also served for breakfast. And sometimes in the evening tea time as a snack. Pol Roti can be easily prepared with just two simple ingredients and you can make it within a few minutes.
This Sri Lankan flat bread can be adjusted as your taste. If you prefer eating spicy then you can chop Onions and chillies and add to the mixture. But today I’m going to make it in the normal traditional way.
Let's check what is needed to prepare Pol Roti
Ingredients
- 2 Cups Freshly Grated Coconut
- 2 Cups flour
- 1 Egg (Optional)
- 2 tbsp of Coconut oil (You can use normal vegetable oil)
- ½ cup of Coconut water (You can use normal water)
- Salt to taste
How to make
Use a bit larger stencil and add grated coconut and Flour. Adding more grated coconut will make your roti more tasty.
Add Salt, I added 2 ½ tsp salt
Add in the egg, this step is optional. You can skip this step if you are vegan.
Add coconut oil
Gradually add the coconut water, do not pour at once. Coconut water makes the dough softer and easy to handle.
Mix all ingredients together and start kneeding for 5 mins. Until it doesn't stick to your hand.
This is how the dough looks like after kneeding. Seperate the dough into small balls.
At this stage oil your pan and heat on medium flame. And then start making it to a nice round shape using the hand. Don't worry about the shape it's little hard to get perfect round shape. You can use little oil to make it more silky.
Cook the roti until it gets brown spots and turn the sides.
One side done and then the next side. Now you will able to experince the incredible aroma of coconut which is really unexplainable. Remove from heat once both sides are cooked.
Ready to serve....
Along with Pol Roti I served Spicy Chicken curry and Lunumiris (A sambol made out of Onions and Chilies). If you don't like any spicy curries, Then you can try it with a bananna or a piece of Jaggery. I love eating Pol roti in both the ways.

I love Pol Roti with Chicken curry more than Lunumiris actually. And it will be a dishonor if I didn't mention pork curry here .. it's the best curry for Pol Roti.
