SteemFoods Contest -5- | Your Mom's Favorite Recipe - Kokis
Hello Everyone, this is Damith from Sri Lanka. Hope you all are doing great.
Let me ask you a question. Is there anything that tastes better than mom's food? For me, the answer is no, nope, never. The one thing I miss being away from home is this.
So, contest organized by @steemitfoods gives us the chance to share our mom's favorite food.
It's all about Kokis .
Kokis is a deep-fried and crispy Sri Lankan traditional food made specially during Sinhala and Tamil New year season (Traditional New Year celebration in Sri Lanka, annually in April). Well, this season is just happiness. Games, special food, the meeting of relatives, and many more things. An icon of this season is the dish of Sri Lankan traditional food. (Aluwa, milk rice, Dodol, Kewum, Kokis, etc). So, from childhood my favorite one is Kokis.
We usually, make this on special occasions or festivals. But today, we made it for the evening tea time. Actually, I can't make the mixture well. My mom is an expert in it.
So, let's see the recipe.
Ingrediants
- Rice - 250g
- Plain Flour - 500g
- Coconut Milk - 800ml
- Egg - 01
- Turmeric Powder, Salt, Sugar, curry leaves as needed
- A special mold of decorative shape such as a flower (Kokis Achchuwa in Sinhala)
- Oil for deep frying
Preparation
* Step 01: First immerse rice in water for a few hours and remove the water as shown in the figure.
* Step 02: Then blender the rice well and sieve it at least for twice.
* Step 03: Sieve the plain flour and mix it with the rice flour
* Step 04: Mix coconut mix, salt, sugar, turmeric powder, curry leaves , egg well and add two types of flour to it. Give a good stir.
You can take the mixture out when it's like the picture below (non-sticky) as sown in the figure below.
* Step 05: Heat oil in a pan (Thachci in Sinhala) and hold the Kokis mold for a few seconds until it gets hot.
* Step 06: Dip the mold in the mixture(make sure not to submerge it completely, unless it's difficult to remove the mold).
* Step 07: Dip the mold again in the oil and gradually separate it from the mold using the stick. Keep for some time until golden brown. (Nearly 75 Kokis can be made with this amount of ingrediants.)
Then enjoy the dish at tea time!!
So, that's it. The process is easy. But the result is yummy.

No no... There are different shapes of molds just like flowers, birds, or just rounded ones. here are some examples.

One of my favourites. I think it is everyone's favorite in the New year season. We add some pepper and chopped curry leaves too. It gives a spicy taste then
Yep... It's one of the best... We also usually add curry leaves... But with the rain, I couldn't go to find them... Better to mention here
