My Diary Game today: I I decided to cook Afang Soup & Plantain Porridge Akwa ibom delicacy: (15/8/ 2025)
however, "Every great meal begins with fresh ingredients and aromatic ingredients" today, I woke up early with a mission to prepare a delicious pot of Afang soup and plantain porridge. I took my shopping bag and headed to the market, where the womens were giving me their familiar sounds of traders calling out prices, the smell of smoked fish, fresh fresh pepper, and spices. but the funny part is when the market womens used called me umo eno come and buy oh, meanwhile umo eno is the governor of my state, because I'm fair in complexion.
Here are what I bought and why each ingredient is value when it comes to this aspect:
Periwinkle Adds a distinct seafood taste and a chewy texture that enriches the soup.
Dry / smoke Fish Gives a natural flavor and blends well with the spices, making the broth tastier.
Cow Beef ( Kanda) Brings a hearty, meaty flavor and protein to the soup.
Fresh Pepper Provides heat and aroma, making the soup vibrant and stimulating to the taste buds.
Waterleaf A soft, juicy vegetable that gives the soup moisture and a smooth texture.
Afang Leaves (Okazi) The star of the soup; earthy taste that balances all the other flavors. akwa ibom best delicacy
Palm Oil Adds a rich, red color and gives the soup its signature Nigerian taste.
Crayfish gives it natural flavor booster, adding depth and umami to the meal. finally this gave me a yummy aromas and it will also give you, try it !
Step-by-Step Cooking Afang Soup
"the kitchen came alive with colors, Flavors, Aromas was something else just because sexy chef don enter kitchen eeeehhh and my brothers where hanging by the doors and the window of the house waiting for me to bring it down.
Wash & Trim the Periwinkle This took patience.
I wash the waterleave ,The waterleaf was rinsed and chopped.
Prepare the Base, I heated palm oil in a pot, added my blended pepper and crayfish, and let the aroma fill the room , oh no!
Add the Proteins, The beef, fish, and periwinkle joined the pot, soaking in the rich pepper-oil mixture.
Add the Waterleaf. This softened the texture and released natural moisture into the soup.
Add the Afang Leaves, Last but most important, the Afang leaves went in. I stirred gently until everything was well mixed. I be full husband material.
I step up my game with plantain Porridge for dinner.
As one dish cooked, another was prepped
Peeled and slice the unripe plantains into chunks.
Added them into a pot with water, onions, fresh pepper, palm oil, Kanda seasoning it and give it normal stir.
Allowed it to cook until the plantains were soft and the porridge was thick and flavorful. my plantain porridge is delectable, delicious, pleasant -tasting, luscious, scrumptious and toothsome. whatever words you choose to describe it, it fine by me.

By the time I finished, my kitchen was full of life the Afang soup was thick, red, and richly flavored with periwinkle, fish, and beef. The plantain porridge glowed golden in the bowl, sweet and spicy at the same time.Cooking might take time, but when you understand the function of each ingredient and watch them come together, it feels like creating a beautiful piece of art.
