I arranged a Pantry Party many moons ago, not for a blushing young bride though!
It was for 70 year old Mom Lily who at the time was moving into her and Dad Malan's new cottage, which many moons later on became Lily's Cottage as we started running it as a BnB. Mom now lives with us. Mom at the time wanted a real old fashioned walk-in pantry so the design had to be changed to incorporate her pantry!
I made this sign for her pantry as Mom Lily turns up her nose at anything that does not provide good nourishment!
Cream Scones still were on the menu that day as I simply can't keep my hands to myself when I see them on any tea table so will find an excuse to bake scones whenever I can!
Mom's pantry sign now sits in my kitchen as a reminder as I'm the one who loves things like cream doughnuts and all other forbidden foods;)

Today I will share with you a much healthier, but amazingly light and fluffy delicious Vegan version - Coconut Cream Nutty Wheat Sultana Scones.
Subtle Vanilla flavoured Coconut Cream plus Strawberry jam made the perfect topping for these Scones.

I was curious to find out how Coconut Cream is derived and found interesting facts HERE

Coconut cream is made by boiling coconut flesh with water. Even though it’s prepared the same way as coconut milk, it has a richer and thicker consistency.
Coconut water is the fluid found inside fresh coconuts. This naturally sweet water contains 45 calories per serving and is loaded with potassium and other electrolytes, making it a perfect replacement for sugary, additive-laden sports drinks.
Real unsweetened coconut milk is made by taking equal parts of shredded coconut and water, and bringing them to a boil. The mixture is then sifted through a cheesecloth and pressed to release as much fluid as possible.
Be sure to read the ingredient label as some Coconut Milk could contain unwanted sugar, food additives, and stabilizers.
HEALTH BENEFITS

  • It contains Lauric acid which can help promote weight loss and improve cognitive function.
  • Works synergistically with cancer cell-specific chemo agent selenite, which helps ease the brutal side effects of chemotherapy.
  • Increases HDL, which is the good cholesterol.
  • It also has positive effects on the cardiovascular and neurological systems.

Coconut Cream Nutty Wheat Sultana Scones

  • 500 ml Stone Ground Cake Wheat Flour
  • 250 ml Stone Ground Nutty Wheat or Wholemeal Flour
  • 20 ml Baking Powder
  • 2 ml Salt
  • 20 ml Treacle Sugar
  • 100 ml Sultanas
  • 125 ml Oil
  • 20 ml fresh Lemon Juice
  • 200 ml Coconut Cream Water
  • Coconut Cream - scoop the thick cream off the top & refrigerate, add a few drops of Vanilla Essence, use the remaining water for the scone dough

Mix dry ingredients together
Beat Oil, Lemon juice & Coconut water together, add to dry mix and mix lightly till it forms a softish dough - never overwork scone mixture.

Pat lightly with fingertips onto a surface sprinkled with rolled oats till dough is approx 2,5 cm thick, cut into circles.

Getting into the spirit of Christmas, I formed a Christmas tree on baking paper with the dough circles and cut a couple of tiny star shapes.

Bake approx 15 min at 190 C

Coconut cream with a touch of Vanilla tasted rich and creamy and of course is a much healthier option!

Thank you Lena, I would never have thought of using coconut cream if it were not for FAVM;) So glad to have tried it like this, the touch of vanilla makes all the difference and of course this is much healthier than cream!

So festive and delicious! My goodness you always hit the spot. I would love a few of these on my table any time of day. :)

These wholemeal scones are a favourite with soup in wintertime as well, of course minus the trimmings;)

Thanks for interesting information on Coconut cream, it is a lovely texture, never thought to use it with a few drops of vanilla and use it as a cream, that is my next thing to try thanks @lizelle

I learnt that from the folks at Fruits and Veggies Monday, first time I tried it like this though! It's so much kinder to the digestive system too. I have used it in cooking curries before. Thanks for popping in:)
