Fungi Friday - Crown Tipped Coral
This is one of my favorite edible mushrooms. Crown tipped coral aka Artomyces pyxidatus can be found early summer after a rain growing out of old dead hardwood logs.
I find that it likes to grow in the shade towards the bottom of dead logs. This makes it kind of difficult to find. You really need to move leaves and branches out of the way to find them.
I usually prepare these just by cooking them lightly in butter. They have a nice mushroomy taste and the texture resembles angelhair pasta. Another interesting cooking feature is if you flash boil them then they retain a spicy peppery taste. Many asian soup recipes use this as a garnish for looks and a tiny bit of spice.

They have to be cooked otherwise they can cause stomach upset if you eat too much raw. Also only try a little bit when trying out a new shroom just in case you m8ght be allergic.

I have often seen those for sale at the local Asian supermarket and debated whether to buy them and try. I think I will now
