FruitsAndVeggiesMonday | Vegan Noodle Soup

I'm back again this week making a post sharing some of the Plant-Based food I'm eating during my 100 Day Challenge. This week it's a Vegan Noodle Soup with some fresh vegetables that can be used as lunch to take to work. This is my entry for the #fruitsandveggiesmonday competition which is hosted by @lenasveganliving and sponsored by @progressivechef & @englishtchrivy.

This noodle soup is quite easy to make and what goes into it can be chosen based on what someone has available and personal preference. There are plenty of healthy things inside to give extra flavor like Ginger, Chilli, tumeric, lemongrass. I tend to keep all of those in the freezer so they can be easily graped and added in the Jar. All vegetables go in raw an get cooked by the boiling water which is added minutes before serving it.


Cut the carrots and mushrooms in pieces and add them to the jar


Add some cut salad along with some radishes.


Grate quite some ginger, chilli and tumeric (fresh lemongrass also an option, I only had it in power form)


Power Lemongrass, Wakame seaweed and some vegetable stock. (I normally use Miso, but did not have it this time)


I'm using glass noodles made from bean starch and drain them in warm water for a couple minutes first. To make this 100% plant based you can leave aside the noodles and add extra vegetables intead o it's a vegetable soup.


Top it off with some cut Spring Onion and sesame seeds.


If you want to make it on the go, you best put the wet ingedients in the bottom and use rice vermicelli which does not need any prior soaking.


Add boiling water and shake it all around a bit

I usually eat this a couple days in a row or plan something to make with the mushrooms as you only need a couple of them in this noodle soup.

It' actually really easy and fast to make and most of the base ingredients can be stored for a long time. After that a couple fresh vegetables and 10 minutes time do the trick.
