Fruits and Veggies Monday | It’s a Crispy Blueberry Tart Day!

DSC_0045 (2).jpg

Good Morning My Fruits and Veggie Foodies!

I hope you all had a great weekend! Mr. Bird and I spent a lot of time outside, relaxing on the lanai.

We’re getting ready to take another road trip my friends! Today was the day to prepare!

I popped out of bed this morning ready to hit the kitchen and create something fun for Fruits and Veggies Monday! Thanks to @plantstoplanks and @lenasveganliving we have this great weekly get together. This week fellow foodie @lizelle will be our guest judge and based upon her wisdom and creative genius I know she’ll do a wonderful job! I want to give a big thanks to all three, without them we wouldn’t be celebrating how fabulous fruits and veggies are in our daily lives.

Mr. B and I were sad to see our family leave this weekend so I think I’ll make a little Monday surprise for him. I know he loves Blueberries so I’ll showcase these little gems today. We all know they’re packed with anti-oxidants, something which will help regenerate two tired birds!

Crispy Blueberry Pecan Tart

All I needed

  • Gluten Free Oats (3/4 cup)
  • Almond Flour (1 cup)
  • Maple Syrup (4 tbsp.)
  • Baking Powder (1 tsp)
  • Sea Salt (dash)
  • Coconut Oil (5 tbsp.)
  • Pecans (2 tbsp.)
  • Fresh Blueberries (3/4 cup)
  • Tapioca Starch (2 tsp)

We begin with…

Blueberries. You know blueberries are very low in calories and one of the most nutrient dense berries! They're high in vitamin C, K and fiber! Studies have shown blueberries lower bad cholesterol, may reduce heart disease and the incidence of cancer Not to mention, they taste so good! Be sure to wash them well! I mixed the fresh Blueberries with 1 tbsp. of Maple syrup and the Tapioca Starch in a small bowl. Set aside for a sec!

You’ll love this…

crispy crust we’re making. Mix the Oats, Flour, Maple syrup, Baking Powder, Sea Salt and Coconut Oil together in another bowl.
DSC_0008 (2).jpg

Set aside…

½ cup of the oatmeal mixture and press the balance into your favorite tart or baking dish. Spoon the blueberry mixture into the crust.

Don’t forget…

to chop the pecans! This is my favorite addition, this topping is amazing with blueberries. You’ll love it! Add the pecans to your reserved mixture and crumble on top of the blueberries. I promise you’ll be tempted to eat this now…but hold on!

Into the…

oven at 350 for 40 minutes. I covered the tart after 20 minutes; I didn’t want the topping to burn. Remove and let it cool…as long as you can! Golden brown and bubbly!

Voila! Happy Fruits and Veggies Monday my friends

DSC_0054 (2).jpg

Grab a cup of tea or a glass of milk….and enjoy!

Stay tuned my friends; the Birds will be back on the road! Who knows what we’ll see!
Thanks for stopping in!
And as always, blessings to you all!

The STEEM Engine

This looks so mouthwatering! I LOVE oats!!!

I tried that Keto brisket pocket except I used chicken was DELISH! My family loves it and wants me to make it again! Thanks so much for the recipe! I mixed barbecue sauce, honey and garlic together for the sauce!! Yum! 😋

Oh my goodness that looks soooo tasty!! I just love those pockets, think of the ingredients you can include. Chicken with a honey barbeque sauce, yikes I'm going to have to try that one! I actually have smoked chicken on hand, yay! Thank you @crosheille, so glad you enjoyed the keto pocket. I know your kids would all love this blueberry treat! :)

Thank you I was really glad they turned out tasty!! Oh yes smoked chicken would be awesome!!!

I never used to like blueberries, but not I enjoy them and have them often but have never had a blueberry pie like that and it looks so good I must say

oh my @tattoodjay, this one is particularly healthy too! I know you would like it (I even enjoyed a slice for breakfast!) Thanks so much :)

Healthy and tasty and even good for breakfast moving this up my list of ones to try :)

Wow, mama! Looks sooo good. I love blueberries, but they are super pricey here. Will have to wait for a special occasion to make this xx

That makes me sad they are so expensive for you!! I would think they would grow them all over your area, perhaps its just too hot and dry? Anyway, just substitute any berry you have available, and btw this is amazing with N-ice cream!! lol Thank you @princessmewmew, so glad you stopped by! :)

Well you've done it again. Got my my tummy growling first thing upon catching up on the FAVM posts I haven't gotten to yet. Of course it is right when I'm having a cup of coffee and would love to have a piece of this! So delicious, and I can just imagine that berry boost after enjoying some!

I'm so glad you enjoyed this one, I know you'll have blueberries shortly, and this is really nice with n-ice cream :) Thank you Katie, and thank you for hosting this great weekly get together! :)

You always get my mouth salivating Mrs. Bird, but especially this time!!! For some reason I've been eating blueberries more than usual and I even made porridge yesterday which I am going to post later, but that is nothing compare to your amazing crisp that I can only dream about at this moment. Another masterpiece my Dear 🍇💜🍇

lol, you are too sweet Lena! Your recipes do the same to me! I am so thankful for this weekly gathering, it really allows me to get new ideas for healthy cooking, is the other hand coming along? Did you have a second surgery? Be well my friend!

You re most welcome my Dear. I know what you mean while seeing all the recipes here. Unfortunately, because of my hands, many of them I cannot do. Altough my right hand is healing, it has still long way to go and the left one is scheduled for November 6th. Thank you for asking, you are very sweet Troy 🌸💖🌸

Oh my goodness dear, I am so sad you are unable? to enjoy cooking right now (although that porridge looked amazing, lol) Novemer 6th, that is such a long time to wait. Take care of yourself, pamper yourself and don't do any activities too soon, we want you back in tip top cooking shape very soon!

Oh no no no...why do you live in a land so far away Mrs Bird? I love crumble tart, this one looks amazing!

I wish you lived close by! We could trade treats back and forth! I don't know about you but none of my neighbors do this, lol! So happy you liked this, these crisps remind me of my grandmother, baking with her and of course this would be amazing with a scoop of n-ice cream! :) Thank you sweet friend!

For sure, and I must not forget to use Nice cream not Ice cream ;)
I used to have a neighbour yonks ago, who also loved baking and we used to share our treats and recipes! But now I have a friend I can chat to and enjoy virtual treats at any time across the waters :)

@birdsinparadise, this is something that I can sink my teeth into. Fairly simple to make, great ingridients, especially the pecans. I can't wait to try this scrumptious looking dish. Thank you for this recipe.

Very simple my friend! I love pecans and try to include them often :) I hope you'll try this, ('s even great for breakfast with a spoon of yogurt :) ) Thanks so much!

Dear @birdsinparadise

Your food recipes are nice but, can we get back on 3 ingredient, quick cook ones? because i love the one you made with the whole peanutbutter, palm oil and vanilla cookies? thing.

Please keep them coming!

lol, yes I will do that @nurseanne84! In fact I am trying some new ideas now so stay tuned :) You are so kind thank you for your sweet words of support!

Wow!! Drooling... Resteemed!
I missed another Monday post, gotta keep myself reminded...

Monday is a dangerous food day....I have to eat a good breakfast before I check out the fruits and veggie posts lol So many great options :) Glad you enjoyed this one, I hope you'll try it some time. Thanks @roselifecoach!

I know what you mean, especially when checking posts during midnight...

One needs a small mortgage to afford imported blue berries in Thailand. But I have 3 mulberry trees full of green fruit in thebgarden so a local, adapted mulberry version looks to be on my radar.... soon. 😋

I put this fwd into c-squared curation community cos it looks soooo good and deserves strong support.

You are so kind @artemislives, thank you! I'll be interested to hear about using mulberries! We have those here and I would love to forage for them and include them in a tart :) It's too bad they are prohibitively expensive where you live, :(

This looks wonderful. We just got our first few blueberries today--still not quite sweet enough to pick. More are on their way from our side garden.. This looks like a lovely way to use them.

I am so jealous, I wish I had blueberry bushes :) I can't imagine being able to pick them and eat them! So fresh. I hope you harvest enough to make many tarts! So many options, oh how wonderful that would be! Thanks @toddrjohnson!

Ohh my, looks good enough to be my new favorite thing. Thanks for sharing look forward to my attempt

You know, there are certain desserts which take me back to childhood and baking with my grandmother. This is one such recipe. Although she would use blackberries which we picked on some obscure piece of land, I always loved these oatmeal crisps. (Her's however were packed with processed sugars, lol) I hope you'll make this and let me know of any changes you make! Thanks @toddfoster!

That looks delicious!

This looks amazing, yay it's gluten free also, will have to try to give this one ago, would frozen berry's make the crust too wet?

Give it a go girl! I would love to hear what you think! Frozen berries will work, just make sure you thaw them and make sure you aren't adding any additional moisture to the berries :) Gluten free works in my house!
