The traditional Indonesian food tradition has important ties to easily available food ingredients from agriculture.

Cassava is an easy-to-obtain food ingredient in Indonesian, with prices cheaper than potatoes. Cassava is often used as a variety of foods, ranging from staple foods, to dessert and even made into flour for other food-making mixtures.

Cassava

On this post, I will introduce you to traditional food made from cassava which is very simple, but this food has helped many people to drive away from hunger.

This food made from cassava is called "KEMPLANG". Kemplang is a small flat cake of minced or finely chopped food made from cassava.

These patties are suitable for consumption by vegetarians. I will share the following recipe with you

The main ingredient

  • 500 gr cassava
  • Oil for frying
  • Vegan Margarine to taste
  • 1 stick of celery sliced ​​thinly

Ingredients for Seasoning

  • 1/2 teaspoon of coriander
  • 1/2 teaspoon of salt
  • 1/2 teaspoon of pepper
  • 3 cloves of garlic
  • 1 clove of red onion
    Directions for making seasonings: Mix coriander, salt, pepper, garlic, and onion, then blend.

Directions for Cooking

1.Peel cassava, then wash it clean.

2.Smooth cassava using a grater.

3.Mix the cassava that has been mashed with seasoning, chopped celery, and margarine.

Add margarine slowly enough to make all the ingredients into a moldable mixture and the texture is not too soft.

Cassava from various regions has different textures with different water content. If after it has been mashed smoothly, then the material has a lot of water, then you should squeeze the water content in the mashed cassava, using a food filter cloth.




4.Form doughs like patties that are commonly used for burgers, but with a slightly small and rather thick shape.

5.Heat the oil, then fry the cassava patties until they are browned.

6.Serve Cassava Patties while warm.

Very tasty!

This snack is usually enjoyed during the afternoon while drinking coffee and gathering with family, or even this simple meal is used as a provision to be enjoyed by the farmers at rest time while farming in the fields.

It's a simple meal. It feels like the traditional tradition of Indonesian people who are friendly and warm. My family and I still often make this traditional food that has been forgotten begin to be forgotten, even difficult to find in cafes or restaurants. :)

This is an excellent recipe my Dear and I would like to try it, but I am wondering if they could be baked in oven instead of frying 🥑😍🍓

For baked, this recipe is not suitable because the taste is savory.

For baked, there are another recipe. Maybe I can sharing someday.

Basic taste for baked cassava is sweet. Mix weel with palm sugar. It would be very great dessert. 😊

Love seeing traditional recipes being passed down to the next generations! The simplest of ones are usually the best and most heart-warming. It doesn't take much to make me happy, and I have a feeling these would satisfy my afternoon snack craving! Cassava is not as popular as the potato here, but I am seeing the flour more and more often. I would imagine I can find it fresh at the international market, as well.
