SUNFLOWER SEEDS (5-minute Freewrite)

"Sunflower seeds! Bleech!" Beulah spit the crushed seeds from her mouth and onto the sidewalk. She reached deep into her trick-or-treat sack to retrieve another morsel. This time she pulled out a miniature chocolate bar. Her favorite too - dark chocolate.

Halloween was her most favorite time of the year. She dressed up as whatever her heart desired. Once a black cat, once a witch, once a ghoul, once a princess, once a toilet. Yes. That has been a real hit at the school harvest festival.

The one thing she loved most about Halloween though were the jack-o-lanterns. And even more than carving and lighting the gourds - she loved their delightful innards.

Beulah would scoop out the insides and spread them thin across a baking tray. She would slide off the goop and leave behind the seeds. A spritz of oil, a dash of salt, and into the oven! Roasted pumpkin seeds were the absolute best treat of the season!

She reached into her bag again and pulled out a small sealed bag. On the side, a smiling pumpkin face and inside a handful of delicious salted seeds.

Roasted Pumpkin Seeds

Ingredients:

2 cups raw, in shell Pumpkin Seeds
1/2 stick Butter
3 teaspoons Seasoned Salt

Instructions:

Remove seeds from pumpkin, removing as much pulp as you can.
Rinse seeds in colander.
Melt butter in microwave safe bowl. Add seasoned salt. Stir to mix.
Add pumpkin seeds. Stir to mix.
Spread pumpkin seeds in a single layer on jelly roll sheet or glass baking pan.
Place in oven preheated to 300º.
Stir at 15 minute intervals, cooking for a total of 45-60 minutes.
Let cool and place in an airtight container for up to three weeks.
