Double Chocolate Chunky Monkey Ice Cream (+ video) - Steemit Food Challenge #3

This is a quick and easy homemade ice cream recipe to cool you off on a hot summer day — no ice cream maker required! Are you a Ben & Jerry’s Chunky Monkey ice cream lover? Then I bet you are gonna love this one too!

Also, it is an excellent way to put overripe bananas to better use. Or why not try it with different fruits. Mango or papaya are delicious too.

First food video I ever made. While it is far from perfect, I'm kinda proud I finally​ made one!

🍦 Double Chocolate Chunky Monkey Ice Cream Recipe

Ingredients (2-4 servings)

  • 3 bananas (sliced and frozen)
  • ⅓ cup nut milk (I used coconut milk)
  • 2 tbsps raw cacao powder
  • 2 oz (55g) dark chocolate (or raw cacao nibs), chopped into small pieces

Directions

  1. Peel, slice, and freeze bananas. Cool coconut milk in the fridge.
  2. When the bananas are frozen, make sure you have all other ingredients ready.
  3. Put the frozen bananas in a high-speed blender or food processor.
  4. Add nut milk of your choice. Using a spatula, blend mixture until it resembles soft serve ice cream. If using a food processor, stop and scrape down the sides if necessary.
  5. Then add cacao powder blend until well incorporated.
  6. Stir in chopped chocolate chips and spoon into small bowls. Or freeze the ice cream for at least 20-30 minutes if you prefer a harder consistency. We like soft serve!
  7. Optional: top with superfoods such as chopped nuts, goji berries, mulberries, or shredded coconut if you like.

Just because for the love of ice cream - I am thankful for your recipe because you didn't use an ice cream maker nor any sugar (THAT MAKES IT VERY UNIQUE and HEALTHY!!!!- not angry just emphasizing!) and you used coconut milk. I find it very creative to have used just 4 ingredients. I'm going to give this a try! Thank you very much! Good luck!

My pleasure. Since we started making ice creams like this, we haven't bought regular ice cream. So much better and healthier. You can actually use most fruits and nut milks for it (hazelnut and almond milk are great too). Cacao and frozen berries is a lovely combo too. Or mango and papaya with shredded coconut is another favorite.

Same principle. Freeze mango in chunks, blend into ice cream! Can't wait till mango season starts again!
