Hello!

It's time for "Yotaro's Food Travel Report"! !
In this report, I will introduce the sushi shop which was the most important purpose for this trip to Hokuriku! !

That sushi shop will be "Taihei Sushi (Zushi)”!
Even among Ishikawa prefecture, it will become a famous shop in the top class! !

Taking reservations of this shop is known for difficult things!
However, the timing of the call was good this time, and I managed to make a reservation! !

This is a long-established shop even in a sushi shop in the Hokuriku region!
Therefore, at “Hokuriku sushi”, it is said to be the original shop! !

Of course, the freshness of the fish was wonderful!
However, the wonderfulness of "Taihei Sushi" was in the area ahead! !

It was "technology and arrangement method"!

The philosophy of "How to make fish deliciously eaten!!” is fundamentally in technology!
The representative dish was "steamed sushi in a Blackthroat Seaperch"! !

For now, this dish can be eaten at a sushi restaurant nationwide!
However, its grandfather was this "Taihei Sushi"! !

"Steaming sushi in a Blackthroat Seaperch" was devised by the generals of the former Tahei Sushi!
I heard the story that the generals of the previous generation taught the craftworkers all over the country and spread it! !

It seems that there was hardly any time in the past to teach other people generously about their skills!
From this also, you can see that "Taihei Sushi" is constantly evolving! !

Also, it was served but the best point was dishes!
It was a wonderful dishware that centered on "Kutaniyaki" which is a famous item of Ishikawa Prefecture! !

In other words, when the dishes are different, the way you feel the taste will differ! !

With this meal again, I understood well about that!
I was able to have a very meaningful time! !

このレポートでは、今回の北陸旅行で、一番の目的だった寿司屋の紹介をします!!

その寿司屋は「太平寿し」になります!
石川県の中でも、トップクラスの、有名なお店になります!!

お店の予約を取るのが、困難なことで知られています!
しかし、今回電話のタイミングが良く、なんとか予約が取れました!!

こちらは、北陸地方の寿司屋でも、老舗のお店です!
そのため、北陸寿司で、元祖のお店とも言われています!!

魚の鮮度が、素晴らしいのは、勿論でした!
しかし、「太平寿し」の素晴らしさは、その先の領域にありました!!

それは「技術と盛り付け方」でした!

技術は「魚を如何に美味しく食べさせてくれるか」という哲学が、根本にありました!
その代表的な料理が「のどぐろの蒸し寿司」でした!!

今でこそ、この料理は、全国の寿司屋で食べることができます!
しかし、その元祖は、この「太平寿し」だったのです!!

「のどぐろの蒸し寿司」は、太平寿しの、先代の大将が、考案しました!
それを、先代の大将が、全国の職人達に教えて、広まったというお話を聞きました!!

自分の技術を、惜しみなく、他の人に教えるのは、昔は、ほとんど無かったみたいです!
このことからも、「太平寿し」が、常に進化を続けていることが分かります!!

また、盛り付けですが、一番のポイントは食器でした!
石川県の名産物である「九谷焼」を中心とした、素晴らしい食器の数々でした!!

自宅での食事の時にも思うのですが、「食器の選び方」も料理の一つだと思います!
つまり、食器が違うと、味の感じ方が、違ってくるのです!!

今回の食事で、改めて、そのことが良く分かりました!
とても有意義な時間を、過ごすことができました!!

I´ve never tried sushi in my life but this is really looking like great quality and taste.
