QUESADILLA -recipe

Ingredients
2 cups canned chicken, drained and rinsed n 3/4 cup water n 1 (1.25 oz.)
package reduced-sodium taco seasoning
1 cup refried beans
6 whole-wheat flour tortillas
1/4 cup green onions, chopped
1 green bell pepper, chopped
1 cup low-fat cheddar cheese, shredded
1 tbsp. canola oil

Directions
1 In a saucepan, bring the chicken, water and taco seasoning to a boil. Reduce the heat and simmer for about 10 minutes uncovered.
2 Stir in the beans.
3 Spoon about 1/2 cup of the chicken mixture over half of each tortilla.
4 Top the mixture with green onions, bell pepper, and cheese. Fold the tortilla over.
5 In a large skillet, heat the canola oil over medium heat. Cook each quesadilla until the cheese is melted.
6 Cut the quesadillas into wedges.
