Poulet à la Provençale

Ingredients:

  • 4 boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1/2 teaspoon dried basil
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • 1 (14.5 ounce) can diced tomatoes
  • 1/4 cup white wine

Instructions:

  1. Preheat oven to 375 degrees F (190 degrees C).
  2. Heat the olive oil in a large skillet over medium-high heat. Add the chicken breasts and cook for 3 to 4 minutes per side, or until lightly browned.
  3. Place the chicken in a 9x13 inch baking dish.
  4. In a small bowl, mix together the garlic, oregano, thyme, rosemary, basil, salt and pepper. Sprinkle the mixture over the chicken.
  5. Pour the tomatoes and wine over the chicken.
  6. Bake in the preheated oven for 30 minutes, or until chicken is cooked through and no longer pink in the center.
