Steemit Iron Chef 2018 Act 01 Round 05 : Vegan Mushroom Benedict
Happy Valentines my fellow Steemians!
Commercialism aside, it's always nice to see people expressing their love for one another on this special day. Spreading love is always a good thing in my eyes! I've always preferred sentimental over buying things so this year I made Cody a super special surprise breakfast/brunch in bed. It was my first attempt ever at making this so I was a little nervous but could not have been happier with the end result! It actually looks like an eggs benedict (because of the mushroom shape) and the flavour combination was amazing! The best thing is that the sauce was made out of cashews instead of an oily vegan mayo so not only was it tasty, it was a lot healthier for you!
For this main we have a portobello mushroom on top of mixed salad, gluten free sourdough muffin and topped with lots of cashew hollandaise. To make this all I used was...
- Portobello mushrooms
- GF sourdough muffins
- Salad mix
- Pomegranate and date salad dressing
- Cashew hollandaise sauce
- Sprouts mix to garnish
The star of the show, the cashew hollandaise sauce, was made out of:
- Activated cashews
- Fresh lemon juice
- Turmeric
- Kala namak (black salt)
- Apple cider vinegar
- Himalayan salt
- Red onion
- Garlic
- Paprika
- Water
All I had to do was blend all the ingredients together and I had a deliciously creamy and tangy sauce! The secret to bringing this all together and a tip for you all is to dress your salad/spinach/whatever you normally use for 'eggs' benny instead of leaving it plain. It definitely takes the flavour profile up a notch!

Thank you! It's sooo tasty and creamy! Start with 1 cup soaked cashews, 1 tbs lemon juice and then a pinch of everything else if you're game enough to freestyle it! Otherwise I'll be making it again to fine tune the details and will post a recipe :)
