Jjajangmyeon Recipe ~ Korean Black Bean Noodles
Learn how to make Korean Black Bean Noodles / Jjajangmyeon. A yummy and comforting Korean noodle recipe using a fermented black bean paste. In this video recipe I show you how to make vegetarian Korean black bean noodles but you can add pork, chicken or beef to this recipe. Serve this delicious black bean sauce over noodles or rice. Korean Black Bean Noodles ~ Jjajangmyeon Recipe
INGREDIENTS:
1 pound cooked noodles
1 to 1 1/2 cups cubed potatoes
1 cup cubed zucchini
1 cup diced onions
1 tbsp. minced garlic
2 tsp. minced ginger
1/4 cup black bean paste
2 cup water or broth
2 tsp. cornstarch/1 tbsp. water slurry
1 tbsp. oil - I used peanut oil
Cook noodles according to package instructions.
In a pan on medium to medium high heat add oil, minced garlic and ginger and diced onions. Stir and cook for 1-2 minutes.
Add in black bean paste, stir and cook for a couple minutes.
Add in potatoes, stir, add in rest of veggies and stir.
Add water/broth and sugar, stir, bring up to simmer and cook for 10 minutes or until veggies are tender.
At end add slurry in slowly to get thick consistancy.
Serve over noodles or rice.
Enjoy.

Love these noodles. I like the color and the slight saltiness in flavor. The potatoes really add some texture. Nice.
