Traditional Swabian cuisine: Spaetzle/ Knoepfle - the basic recipe & unconventional preparation 📷>recipe guide<

Hi Steemians! There are many different types of pasta in Italy but knew it in the south German room better said in swabia also traditional pasta. Today the basic recipe for Swabian spaetzle or knoepfle . Since I am a kitchen guerilla the preparation is somewhat unconventional. The knoepfle are excellent as an enclosed and I will refer to my next recipes again and link.


Ingredients for 3-4 people

450g flour
3 bio eggs
salt to taste
200-250 ml water
prize of fresh gratet  nutmeg


1. Mix all the ingredients in a bowl. Mix everything until the dough blows. (From the hand joint)



2.Heat a pot with water and salt well. And now for the preparation: There are "special" tools to get the drop shape of the knoepfle. Since I do not have this I use a rough kitchen grind. When the water boils, fill the dough on the grater (on the other side, which is otherwise used for rubbing) and slowly pour it into the water. The knoepfle are ready when they get up! (a few minutes)

Sure, I want make this at home. What flour that you use?

Just a ordinary white flour...nothing special!

Being a Swabian myself I feel obliged to contribute a little correction. Knöpfle are in fact badisch and not swabian. The swabian version of this kind of pasta is called Spätzle(which you have mentioned). However, both versions taste equally yummy, imo :-).

Omg...I knew because of the rivalry that it is a hot iron is to make this recipe...😜 A coworker of mine is "badenser" he always says only "there are badische and unsymbadische" 😂 Thank you for the comment!

Wir essen die Spätzle mit käse und röstzwiebel...sehr lecker...toller post.

Ganz ehrlich....hab ich aus Zeitmangel noch nicht probiert. Kommt aber sicher auch noch auf die to- do Liste!

Bevor Du den Käse mit den Spaetzle vermischt..vorher etwas Butter in die Spätzle so verhinderst du das es verklumpt.
