Bamboo Clam - Singapore
My mother does not eat meat. No chicken, no pork, no beef. She does however eat seafood and this dish of bamboo clam is her favorite. Every time we eat at a seafood restaurant, this will be the first dish I would order because I know my mother loves it!
It is important that the bamboo clam is cleaned so that there is no sand or mud. It is then steamed together with glass noodles, garlic and soya sauce. Spring onions is added on top of it after cooking is done to give the dish some color as well as a bit of a crunch.
The sweetness of the clam and the saltiness of the soya sauce combine to give this dish a perfect blend and the glass noodles soak it all up!
