How to Make Spring Rolls

Hello and greetings everyone. I hope you’re all doing great. Today, I wanted to share with you on how to make spring rolls. Sometime ago, I showed you how to make the eggrolls or lumpia.

Well, this time I will be showing you the spring rolls, which are an appetizer, originated I think from the Vietnamese folks, so this is a Vietnamese dish/appetizer. I like and enjoy eating spring rolls. They are great appetizer to savor in your taste bud and they taste just wonderful.

Another reason I like spring rolls is that minty flavor of the cilantro, which is nutritious and healthy to the body. I hope you will try this recipe in your own kitchen at home and will like it too, so you can share them with those whom you love dearly.

Ingredients:

2 c. crab meat, breakdown into strips
10 rice wrapper
2 1/2 oz. vermicelli noodles
1/2 c. Thai basil, chopped in strips
1/4 c. mint leaves, chopped in strips
1/4 c. cilantro or coriander, chopped in strips or just separate the leaves
2-3 leaves lettuces leaves, chopped in strips
1 cucumber, peeled, and seeded, slice diagonally
1 red chili, seeded, slice diagonally
2 tsp peanuts, finely chopped
3 tbl hoisin sauce
4 tsp fish sauce
1/4 c. water
2 tbl squeezed lime juice
2 tbl sugar
1 garlic, minced

Steps and Procedures:

Chopped the herbs, cucumber, onions, and red chili as specified above and place each one in a separate bowls. Place crab meat pieces in a bowl as well.

In a medium saucepan over high heat, heat water and drop in the rice vermicelli and let it cook for 2-3 minutes. Remove and drain with cold water. Put in a bowl and set aside.

Fill a 9” round dish with warm water. Place this next to a chopping board.

Immerse the wrapper in the 9” round dish for 1-3 seconds. Remove carefully and gently place it on the chop-board.

Fill in the wrapper around halfway in the middle of the wrapper, place few strips of crab meat, vermicelli noodles, chili, spring onions, mint, cilantro, basil, and lettuce; then fold the right side towards the center and do the same with the left side. Then fold over the other end closest to you and start rolling the wrapper forward and sealed.

Place the finished wrapped spring roll in a serving platter.
Repeat the wrapping procedures for each spring roll you have to make.

Then in another small bowl combine and mix peanuts and hoisin sauce. Typically this is all you need to dip your spring rolls into as dipping sauce.

However, if you prefer to have a second dipping sauce then do the last step below whichever you prefer.

In a small bowl combine the last five ingredients and mix water, fish sauce, sugar, lime juice, garlic, and chili sauce.

Serve the rolls with peanut hoisin sauce. Bon Appetit!
