Zucchini Noodles with Avocado-Mango Sauce (Raw and Vegan)

Christmas holidays are a time of abundance, especially when it comes to food - one big dinner chases the next and now we feel stuffed and heavy. Although fasting would be a great idea, these raw zucchini noodles also do the trick. We can let go of this heavy feeling in our stomach and have a greater chance to fit into our New Year’s outfit on Sunday ;)

So get ready to ditch your good old pasta and start falling in love with zoodles!


For my recipe you need:

  • 2 medium zucchini
  • 1 carrot
  • 2 kale leaves
  • 1/2 broccoli head
  • 4 black olives

Use a spiral cutter (a small one does the job) to cut the zucchini and carrot into noodles.If you are more of a cucumber type of person, you can easily replace the zucchini. Just cut the other ingredients into small pieces and add them to the zoodles. 

For the sauce, blend the following ingredients:

  • 1 ripe avocado
  • 1 fresh mango
  • Juice of 1/2 lemon
  • 1 tablespoon hempseed
  • Black pepper
  • Sea salt
  • Dried cilantro and parsley

Fresh, light, super delicious - you won’t miss your regular pasta with this recipe and definitely not the lost pounds off your belly if you trade your common noodles for this healthier version!

Die Weihnachtsfeiertage sind eine Zeit des Überflusses, besonders wenn es um Essen geht - ein großes Festmahl jagt das nächste und jetzt fühlen wir uns vollgestopft und schwer. Obwohl Fasten nun sicherlich eine gute Idee wäre, sind diese rohen Zucchini-Spaghetti ebenso eine gute Lösung. Wir können dieses schwere Gefühl im Magen loswerden und habe eine größere Chance am Sonntag in unser Silvester-Outfit zu passen ;)

Also mach dich bereit dich von deinen Pasta-Gerichten zu trennen und dich in Zoodles zu verlieben! 


Für mein Rezept brauchst du:

  • 2 mittelgroße Zucchini
  • 1 Möhre
  • 2 Grünkohlblätter
  • 1/2 Kopf Brokkoli
  • 4 schwarze Oliven

Verwende einen Spiralschneider (ein kleiner ist völlig ausreichend) um die Zucchini und Möhre in Spaghetti-Schlangen zu schneiden. Falls du eher eine Gurken-Person bist, kannst du die Zucchini auch gerne ersetzen. Die anderen Zutaten einfach kleinschneiden und zu den Gemüse-Spaghetti geben. 

Für die Sauce, mixe die folgenden Zutaten:

  • 1 reife Avocado
  • 1 frische Mango
  • Saft 1/2 Zitrone
  • 1 EL Hanfsamen
  • Schwarzer Pfeffer
  • Meersalz
  • Getrockneter Koriander und Petersilie

Frisch, leicht, superlecker - du wirst deine gewöhnlichen Pasta mit diesem Rezept nicht vermissen, genauso wenig wie die verlorenen Pfunde um deinen Bauch, wenn du deine reguläre Pasta durch diese gesündere Zucchini-Version eintauschst!

Wow, a fruitarian, that is super interesting - I will definitely check out your profile ;-) I think it is great that you are not too strict about eating fruits vs veggies. I myself eat raw vegan most of the time but on occasions (eating out, birthday dinners etc) I also settle for some cooked plantbased meals. Sorry for giving you a hard time with the recipe :D

HAPPY 2018!!! We had a blast of a NY party on the beach! FUN on the sun! With jetskies and boats it was cool! I love the recipes, keep them coning! RE Diets... i belive the mind hates frames as it lives at the speed of thought! So im the same i ate salads with cooked vegetables on NY etc... but obviously i wont go past my ethics... Isnt it an awesome feeling when you sort your 'shit' out re diet!?

You start into 2018 sounds pretty spectacular - I am a bit jealous that you got to spend New Year's in the sun, since we are freezing here in Germany (although it is with around 10°C quite warm compared to an average winter) :D

I follow the same believe and try not to get too fixated on a certain dietary concept, but instead to go with my gut feeling and with the signals my body sends me. So true, it could never occur to me to eat non-vegan food again and I have never had a serious craving for something different than plant-based food since I have decided to walk this path.

Yes, I know that feeling! I've long tried various diets and am so thankful to have finally found the perfect way for me :)
