Avocado Toast with Perfect Poached Egg

Today I'm going to show you how to make avocado toast which is very popular as a brunch menu everywhere. I can say Avocado toast is a perfect menu for brunch because it's really easy to make with avocado and bread, and it is healthy and not too heavy and also tastes really good. I made the Onsen-Tamago, which is a Japanese-style poached egg. It can be replaced with regular poached, fried, scramble egg etc., and also you can skip the egg :)

First, I will make Onsen-Tamago which a Japanese style poached egg. It's really simple but weighing and setting the timer are critical, so we have to have some patience ^^ ;; But it is so delicious that it is well worth the effort. First, add 1000ml of water into the pot and boil it. (Please don't skip measuring!) When the water begins to boil, turn off the heat immediately.

And then pour 200ml of cold water into the pot.

We're going to put four eggs in a pot gently so eggs don't get crack, and leave it with close the lid. Now we're gonna wait 12 to 13 minutes. Waiting12 minutes for eggs that have​ been left in the fridge, and 13 minutes for eggs left at room temperature.

If the time has passed, take eggs out of the pot and leave it at room temperature for 5 minutes, and let it soak in the cold water. I know it's a little bit complicated to make it, but trust me it will make eggs much smoother and tastier. You don't have to go to Japan to have Onsen-Tamago anymore ;)

Now let's make a toast! Cut avocado in half, then peel it off ​and crush it with a fork.

I grilled the bread with some olive oil in the pan. You can also use butter.

Put avocado on a crisp baked toast.

After place, ​the ​egg on the toast, sprinkle extra virgin olive oil, salt, pepper, crushed red pepper, and lime. You can skip all except salt and pepper. Lime can be replaced with lemon.

Isn't the egg looks so perfect, is it? It tastes so healthy, and fresh with the lime juice. It's perfect summer brunch menu for summer!!

After reading your post, we were inspired to try this at home! It's holiday season now, so we had all the time in the world to go for it.
We really tried our best, but I think we forgot to crush the avocado. Also, the final result was not exactly as in your pictures.. 😂😂 The egg was perfect though!! Many thanks for sharing that Japanese secret!!

Oh well, we're simply going to try next time again! Keep writing these great recipes, we'll try them out! I'm sure that one day, we'll end up with a good result. Maybe it's a bit like Steemit itself, it can be a challenge to start writing blogs, but while you're doing that, you can only improve, right?

If you ever do try it make sure you only use a TINY bit and spread it will butter on toast. People think its like a normal spread and put too much on and it taste horrible. But then again usually if you're not australian you will probably think it taste yucky anyways hahas :P But it's good to try once.
