***FOOD PORN*** - My Creations!!! Part 2

Hello all Foodies out there!

@progressivechef's back again!

Following the amazing responses I got on the previous post of my food creations, as promised, I will today share with you all some of the other amazing dishes I created during my long 15 years career in the hotel industry!

Just as a reminder , I have been working as a chef for the last 15 years! And my latest positions has been Executive Chef of The Westin Mauritius and most recently Executive Chef of The St. Regis Mauritius!
I also had some working experience in The Maldives, Italy , France , Abu Dhabi and Dubai!

So all the plates that you will see below are the fruits of my hard work and perseverance throughout several years!

Here we go!

Glazed fish with red wine and honey, fruits and vegetables cannelloni, roasted pineapple and tapioca espumas, mint chlorophyll jelly..jpg

This fish dish is one of my greatest satisfaction as a chef! It is named : Glazed fish with red wine and honey, fruits and vegetables cannelloni, roasted pineapple and tapioca espumas, mint chlorophyll jelly.

I used a local fish called shi-drum here which is baked in the oven and glazed with a reduction of red wine and wild honey!

The cannelloni sheet is made of carrots and zuchinni and stuffed with a salsa of pineapple and papaya with a hint of curry!

It was the first time I tried the mint chlorophyll jelly using some mollecular cuisine technique and it was a real success!

I simply named this one as Rock Lobster and Carrot Romance.
The dish is composed mainly of these 2 ingredients! The lobster is roasted in the pan and cooked with butter and as garnish I made a carrot puree with thyme and cardamom as well as crispy carrots!
The pairing of these two gives you an incredible sensation during tasting!

Let's talk about this beautifully presented dessert that I made in 2015!
White chocolate surprise and grapefruits in textures.
Inside the sphere, there is a mascarpone and white chocolate mousse as well as some caramelised nuts for bringing the crunchiness in this dessert!
I made a grapefruit jelly which you see in the circle shape, a grapefruit crispy tuile and wedges as well.

Another fish plate which is inpired by the traditional Mauritian fish curry and revisited of course!

I used the red snapper fish to make this dish! The fish fillet is stuffed with Mauritian pickle , rolled and cooked sous vide!
As garnish, you have a roasted eggplant puree and home made coconut chutney made with fresh coconut, tamarind and mint!
And the sauce is the traditional curry sauce but completely refined and with a touch of coconut milk!

This plate has been one of my biggest challenge so far! Making a banana dessert look nice!
Well I managed to do this amazing Flambeed banana with rum and vanilla ice cream have a good looking presentation finally in the year 2014!
The banana is roasted in it's peel with spices and flambeed with local rum just before serving!
To bring more charm to this dessert, I added a vanilla ice cream, a piece of crème brûlée and also crumble of chocolate cake!

This is the previous version of the Flambeed banana but I was not 100% satisfied with it!

I will end this post with this take on Indian snacks that I had a lot of pleasure creating!

Pakoras are vegetables beignet which are really famous in Indian cuisine as well as samosas! This is a vegetarian dish which became very famous as soon as I launched it!
All the pakoras and samosas are skewered and served with different chutneys!
You have mango chutney, mint chutney, yoghurt and chili sauce presented in onion petals!

Incredible recipe's you've got here, @progressive chef! Working for 15 years as a chef in all the countries listed including Italy is no joke. I have a lot to learn from you. If anyone had told me that you could use onion to serve sauce, I'll find it hard to believe. However, look at it coming to life in the last photograph on this blog. I love eggplants, curry, coconut and fish of course. They are all abundant in Nigeria.I should make sure not to miss visiting your blogs for more of these lovely foods. Well done!!!

Diggin that banana dish. Are these all appetizers? Portions don't seem like mains. Sure look tasty though!

Actually these are dishes for a gastronomic restaurant in hotels I was working before! You have some appetizers and mains too amongst the pics!
The banana is quite easy to do at home!

Oh yes quite expensive in the restaurant, a lot of work is needed that's why! Really very tasty mate! Satisfaction guaranteed!
