Chia Seeds Pudding with Autumn Fruits Puree and Peanut Butter - Full of Fiber and Protein Packed

Happy Monday guys!!

Today I'm posting this recipe that's just perfect to have it as breakfast, dessert or a very "generous" snack.  I like it beacause you can make it in small or large portions. It's very good for your health.

Chia seeds are a very good source of protein, fiber and nutrients like Omega-3 fatty acids, Calcium, Phosphorus and Potassium.

Coconut milk is also a very good source of protein,  Omega-6 fatty acids,  Magnesium, Phosphorus, Potassium, Calcium,  Sodium and Folates. 

Peanut butter is mostly pure protein and fat, like all the nuts there. In addition, it's rich in Potassium and  Phosphorus. If you use bought peanut butter, it has some added sugar in it, but for me this was not a problem. You can look up for unsweetened peanut butter.

And the Fruits - packed with all kind of vitamins and minerals + fiber. 

Just to make this clear: 

This recipe has a lot of calories if you eat it in large portions. It's because of the nuts and seeds and the natural sugars that come from the fruits! BUT it's HEALTHY and guilt-FREE!!

I used the leftovers from this recipe to make the Fruit Puree and then I thought it would be OK to have it with  Chia Seeds Pudding. So I tried it and these two are perfect together! Please read the previous recipe so you can have an idea of what I'm talking about and to see what ingredients you need for the puree. 


INGREDIENTS:

FOR THE AUTUMN FRUITS PUREE 

          +

  •  1 banana
  • Pumpkin Pie Spice

FOR THE CHIA SEEDS PUDDING 

  • 1 cup Coconut milk  
  • 2 Tbsp Chia seeds
  • Optional: sweetener 
  • OTHER INGREDIENTS: fresh fruits, peanut butter

INSTRUCTIONS:

First, we make the Fruit Puree. It only takes a couple of minutes. 

1. After you cooked the fruits for 5 - 10 minutes, let them cool.

2. Then, transfer them into a food processor.

3. Add one raw banana and the pumpkin spice mix and start blending them until you formed a puree texture. 


Now, we're making the Chia Seeds Pudding. 

1. First, combine Chia seeds with Coconut Milk and let them sit together for at least half hour, until they form a pudding consistency. You have to stir with a spoon from time to time.

2. Start assembling the recipe on layers. At the base, add Fruit Puree, then Chia Seeds Pudding, some Peanut Butter and in the end, add a topping from fresh fruits!


That's it! Hopefully I didn't get you tired with all these instructions. It's pretty much simple: one mix of chia seeds with coconut milk and another mix of blended cooked fruits. You put these two together and add some more fresh fruits. This is the short version! 

You can storage the puree and the pudding into the freedge for 2 days. Also, you can do another puree from your favorite fruits. Or maybe you don't like peaut butter! NO PROBLEMA! you can skip it or you can replace it with something else: like tahini, caramel dates spread, jam, etc.
