Chocolate Cajeta Goat Cheese Instant Pot Cheesecakes Recipe and Food Porn

Guys, I've been dreaming of a worry free cheesecake recipe for awhile. What do I mean by worry free? I mean that while cheesecake is delicious it like many lactose based foods has a very unpleasant effect on my body at this point regardless of how my tastebuds feel about it. So I've left it until recently when I got the idea to do it with goat cheese instead, something I've found my body has a much easier time digesting.

Well I did a little research and it turns out it's a thing, so goat cheese cheesecake it is. And it was so good, so worth it and no stomach aches to speak of from me. Ladies and gentleman, I'm satisfied with this one. With chocolate and goat milk caramel sauce called cajeta, it's the perfect blend of sweet, rich and tangy.

What I Used
200 g Goat Cheese
30 g Cream Cheese
1/2 c plain yogurt
1 t vanilla
1 egg
oreos, I used the cookie pieces from 6 of them for 3 cheesecakes
2 t butter, melted
Cajeta
Chocolate Chips

How It's Done

  1. Crush oreo pieces without the centers to make a chocolate powder. Add melted butter and mix to combine, press into the bottom of three ramekins. Bake for about 5 minutes at 350 degrees.

  1. Combine the goat cheese, vanilla, egg, cream cheese and yogurt until smooth.

  1. Put a dollop of cajeta in the center of each crust.

  1. Fill the rest of the way with cheesecake filling.

  2. Set up Instant pot with trivet and 1 cup water.

  3. Put the cheesecakes in the instant pot, put on the locking lid in the sealed position and manually pressure cook them for 12 minutes.

  4. Allow to Natural release and then remove them from the instant pot.

  1. Allow to cool to room temperature then chill.

  2. Add a dollop of caramel to the center of the top of the cheesecake.

  1. Spoon freshly prepared ganache over the top and spread to coat.

  2. Chill for a half hour at least before serving, consume within 48 hours of making it.

It was harder than I expected to photograph this one but honestly very easy to eat. I have a feeling @modprobe will be ordering some of these, as he's requested I make cheesecake repeatedly at this point.

I found myself researching what cajeta is; and, now I hope you will make a batch from scratch. I certainly hope to give it a try over the holidays.
Again, I KNOW this cheesecake is delicious, just by the ingredients. Instead of separate dishes, I hope to make it using a springform pan.

For me, the dishes fit best in my Instant pot but you can always get a springform pan to fit it or just make it in the oven. As for cajeta, I've been asking around for goatmilk here but it's not really found in the city. As soon as I get a goat or some milk though, I'll do it. I've made it with cows milk before but it's different and harder on the stomach.

Very interesting...I usually buy powdered goat's milk. Once it's chilled, I wouldn't know...unless I knew ;+)...that it was made from powder.

Btw, the instapot is definitely gaining in popularity. It might just replace the crock pot.

Hmmm...there might be a way to prepare this cheesecake in the crock.

Looks amazing @lily-da-vine! Wonder why the goat cheese doesn't upset? I cant take peppers to well now and i use to love em.

Goat cheese doesnt have lactose, and I'm lactose intolerant. So the goat cheese is fine for me, it's easier for people to digest in general. As for your pepper issue, you're probably dealing with an alkaloid sensitivity.

Goat milk in general is much closer to human milk so people have no issues digesting it. Even pastuerized, no problems here.

What do you mean? Also onion and sometimes garlic. Never in my whole life could i not eat that stuff and i know im out of wack somehow.?
