In my home country, we don’t really do brunch but while I was living in the States I fell in love with the idea of sleeping in and then having a nice comfy meal. Each time I went for brunch, I made sure to try a different restaurants and something exciting on the menu. This way, I made my list of favorite things to eat for brunch. And for this challenge, I want to present you with an Israeli dish called shakshuka. Before I tried it I never thought of mixing tomato sauce with eggs but now I make this dish for brunch, lunch and sometimes even dinner.

  • 1 tbsp of olive oil
  • Onion
  • Garlic clove
  • 2 cups tomato passata or diced tomatoes
  • 1 bell pepper eggs
  • Chili powder or Cayenne pepper – as much as you like
  • ½ tsp Cumin
  • 1 tsp Paprika
  • Salt and pepper
  • feta - optional
  • green herbs for garnish

Dice bell pepper and onions. Warm the olive oil and fry the onion for few minutes until soft. Add minced garlic and sauté for few more seconds. Add diced bell pepper on the pan and fry for couple minutes until soft. Add tomato passata stir till blended and add spices. Simmer for couple minutes till the liquid starts to evaporate.

Crack eggs in to the mixture and cover the pan. Simmer the mixture for about 10 minutes. The eggs should be cooked so that the yolk is runny.

Add feta and garnish with parsley or basil or chives or green onion.

This looks awesome! And it's a great brunch idea!

my hubby would love this

Smacznego :]

Oooh @knittybynature this looks sooooo good, I am happy to see this tasty and easy-to-prepare vegetarian brunch! I too enjoy eggs and tomato together... you're right saying it's 'comfy' food, but I have never had them with feta as well so I will definitely try this recipe out! Thanks for sharing and good luck!!!

Thank you very much @woman-onthe-wing!! Feta adds a nice salty taste to the tomatoes and eggs and it also reduces the spiciness of cayenne pepper so I think it makes a really nice combination. :)
Thank you for hosting the SCC I really enjoyed this week's challenge!!

I'm happy to hear that @knittybynature, and whenever the theme takes your fancy please do share more of your recipes in the challenge!!!
