Yeah, you typically need to pick about twice as much volume as you think you'll need. Some mushrooms do keep a lot of their mass while cooking, like chicken of the woods and hen of the woods, those are both fairly hearty and stand up to heat.
haha -- I say pick about 4 times as much, so they there can be leftovers for lunch the next day! ; )
The diversity of mushrooms is so amazing. I like the chicken of the woods and the hen of the woods, too. So many good mushrooms! :D
